This Mango Coconut Frozen Yogurt is smooth, creamy and it has a nice subtle coconut flavor that really screams “Summer”. The best part of it, you can now make it at home and you do not need an ice cream machine to make this.
Kicking Off The Summer!
It cannot get any Summer than this Mango Coconut Frozen Yogurt, just the perfect way to start summer. Summer is the most awaited season in Vancouver and maybe in most provinces in Canada who actually have summer season. Who doesn’t get excited when summer arrives? In Vancouver, as soon as the weather gets warmer and the sun started to show up almost everyday, people also starts to come out of their hiding place, hibernation period is over! We only have 3 months of summer, sometimes 4 if we get lucky. Summer starts around June – Sept but the peak is July-August where everyday is all about fun in the sun.
Along with warm sunny weather, summer is also the time where fresh sweet fruits starts popping up in the market. Berries, Apricots, Peaches and Mango, all my seasonal favorite fruits. Too bad there’s too little time to enjoy them, and so while I can, I don’t hold off in making more fruity sweets and desserts, like this Mango Coconut Frozen Yogurt.
It’s Frozen Yogurt Time
Last year, my focus was mainly homemade ice cream that doesn’t require ice cream machine. I had a blast! I had a fairly nice collection of them check out the link at the end of my post. I never knew homemade ice cream could be that easy and fun. This time, I would like to focus more on frozen yogurt, still no ice cream machine required. It’s slightly healthier version of ice cream because it uses yogurt instead of whipped cream, although both uses condensed milk for sweetener, so “slightly” healthier but not quite 100%.
Still No Ice Cream Machine Needed
Just like my other frozen yogurt, you don’t need an ice cream machine to do this. I used my food processor to purée the mixture but a heavy duty blender would work just fine. There’s really nothing much to do but to dump all the ingredients in the food processes or blender and let the machine do the job. The toughest part is waiting the frozen yogurt to harden, I recommend overnight freezing for best result or at least 4 – 6 hours but I imagine it will still be slightly soft, but it’s scoopable which is better. Since this only require few ingredients, make sure to use good quality, sweet and ripe Mangoes and a nice Coconut Greek yogurt of your choice as this will be the base where the coconut flavor will be coming from, on top of the shredded coconut flakes. Let’s get the summer rolling by making this Mango Coconut Frozen Yogurt. Let’s get started!
Ingredients:
- 2 cups ripe and sweet frozen Mango (cut into small pieces)
- 1/2 cup Coconut Flavor Greek Yogurt
- 1/3 cup Condensed Milk
- 2 tablespoon sweetened shredded Coconut
Instructions:
- Add the frozen mango, yogurt, and condensed milk into a food processor or blender.
- Process until creamy, about 3-5 minutes. Scrape down the side of the bowl to make sure there are no lumps left. Add shredded coconut and process for another minute.
- Transfer it to an airtight freezable container. Sprinkle top with more shredded coconut (optional) and freeze for a minimum 6 hours but preferably overnight. Store it in the freezer for up to 1 month. Enjoy!
