This Baked Apple Pie Oatmeal is the perfect Fall breakfast that would keep you full, satisfied and begging for MORE! The oatmeal was cooked until creamy, then topped with homemade Apple filling along with walnut crumble topping then baked until the topping is perfectly browned and the oatmeal extra creamy. Who wouldn’t want a bowl of this delicious Baked Apple Pie Oatmeal?

I thought we could use some hearty filling fall theme breakfast to welcome fall. This Apple Pie Oatmeal is such a delicious breakfast, it’s filling with the oatmeal as base, it has nice texture from fresh double cooked apple, and best of all, the crumble toppings that you would surely love. I am obsessed with crumble toppings, and although Summer is already done, I cannot still let go o crumble toppings on my dessert. I’ve decided to bring it with me for my fall desserts, maybe not only during fall but all year round. You guys have to try this recipe.

Can I Use Other Type of Apple?
Yes, you can use Gala Apple or Red Delicious Apple. I like using Granny’s Smith Apple because it has a nice tart taste plus the texture is crunchy and firm so I doesn’t get mushy easily when cooked.

Can I Make This Ahead of Time?
Definitely! That is one good thing I love about this baked oatmeal. To make this make ahead, simply assemble everything an transfer in a baking dish. Cover and leave in the refrigerator overnight. When you are ready to serve it, sprinkle the crumble on top and pop in the oven and bake for 20 minutes.

Can I Make This Without Crumble Toppings?
Yes, you definitely can. If doing so, add 1 tbsp more of brown sugar when cooking the oatmeal, as potion of the sweetness will be coming from the crumble and if you remove the crumble it will not be sweet enough. You can always add more sugar when you are eating it.

Ingredients:
Oatmeal
- 1/4 cup Rolled Oats
- 1 3/4 cup Milk (Can be substituted with a mix of water and milk in any proportion)
- 1 tbsp Brown Sugar (can be substituted with other sweetener of your choice)
- 3 tbsp Raisins
- 1 tsp Chia Seed – optional
Apple Mixture
- 1 Granny’s Smith Apple
- 3 tbsp Brown Sugar
- 1 tbsp Water
- 1/8 tsp Cinnamon
- 1/8 tsp Nutmeg
- 1/8 tsp Salt
- 1/4 tsp Vanilla Extract
Crumble Toppings:
- 1 tbsp melted Butter
- 2 tbsp Rolled Oats
- 2 tbsp Brown Sugar
- 2 tbsp Chopped Pecan
- 1/4 tsp Baking Powder
Instructions:
- Preheat the oven to 350F.
- Cook the Oatmeal: ln a sauce pan, add milk, water and oatmeal. Bring to a boil and cook for about 5 minutes. Add brown sugar and cook for another 10 minutes. Add raisins and chia seed and mix until distributed. Set aside while you prepare the apple.
- Make the Crumble Toppings: in a small bowl, microwave buyer to melt. Add oats, flour, brown sugar, baking powder, and chopped nuts. Use your fingers on to crumble the mixture until it starts to clump when you squeezed it. Set aside in the refrigerator.
- Prepare the Apple: Remove the skin of the apple and slice in small pieces. You can also slice it in wedges. In a heated pan, add water, brown sugar, salt, cinnamon, vanilla extract and nutmeg. Stir until the sugar is fully melted. Add sliced apple and stir to coat apple with the syrup. Cover and cook for 8-10 minutes.
- Oatmeal + Apple: Transfer the oatmeal in a baking dish or cast pan. Stir in cooked Apple and stir until combined. Sprinkle crumble on top.
- Bake for 20 minutes or until the crumble toppings turns brown and crunchy.
Serve with thinly slice apple on top.
