The heat is ON and so are these homemade 3 Ingredients Blueberry Yogurt Swirl Popsicle. This is a nice way to cool-off during the hot Summer days which by the way here in Vancouver is only about 3 – 4 months duration. So short time for all the things I want to do and Summer fruits that I want to enjoy.
This popsicle only uses 3 simple ingredients that are easy to find. Just blueberry, yogurt and honey. If you prefer something that is non-dairy and not sweetened, I have my Nothing But Fruit Popsicle as well, I left a photo and the link in the featured posts section below. How to Estimate How Much Mixture You Need to Fill Your Popsicle Mold
Popsicle mold comes in different sizes and shape. What could probably fill 2 large popsicle mold for me might be not the same for yours. Bear in mind that the amount of Blueberry and Yogurt needed will depend on the size of the Popsicle mold you are using. To see how much you need, fill a popsicle mold with water then transfer the water in a measuring cup. Whatever the measurement, multiply it by the number of popsicle mold you want to fill. Mine was 1/2 cup per Popsicle mold, so 6 popsicle molds that would be 3 cups of liquid (more or less).
How to Make Blueberry Yogurt Swirl Popsicle?
3 Ingredients and 4 simple steps is all that you need to do, how easy it that? Here is a summary of the 4 steps, check out the instructions below for the details
- Extract Blueberry Juice: This step is where you make a Blueberry puree. Stove top cooking, simple and easy.
- You can also use Blueberry Jam but it will be slightly sweeter than using puree Blueberry
- Mix the Yogurt: and Honey: I used plain greek Yogurt for a thicker consistency, and I used honey for sweetner. Mix them both together, taste and adjust sweetness as desired. Once you are happy with it, mix in the Blueberry puree.
- Pour in the Popsicle Mold: Divide the mixture in the popsicle mold
- Freeze: This step you cannot rush. I suggest freezing it overnight, be patient 🙂 it is worth the wait
How to Remove the Popsicle from the Mold
Removing the popsicle could be frustrating at times, but if you know how to properly do it, it will not drive you crazy. If you are using a non-silicone mold like what I have, pour a warm water in a large jar then quickly dip in and out the popsicle mold. Pull the handle to loosen it, continue dipping until it totally loosens. This will allow easy release. Make sure not to have the water too hot, you don’t want to melt the popsicle even before you get to take it out. Alternatively, you can also run it under a warm water (from the faucet) and keep on rotating to warm both sides of the popsicle. If you can find a silicone mold, that would make your life easier, but in case you cannot then just follow this simple step and you’ll get the popsicle out ready to enjoy.
- 3/4 cup plain Greek Yogurt
- 5 tablespoon Honey (adjust sweetness according to your preference)
- 1/2 cup Blueberry
To make a large batch, simply double or triple the recipe. This makes only 2 large popsicles.
- Extract Blueberry Juice: In a small pan, add the Blueberry and 1 tbsp of honey. In a medium heat, cook for 5 minutes. Once the Blueberry starts to burst (in about 2 minutes time), use a spoon and press down or mash the Blueberry to further burst the remaining whole Blueberry. Transfer in a strainer with the bowl underneath. Use a spoon to mash the Blueberry and extract the Blueberry puree. You should get about 1/4 cup of Blueberry puree from this.
- Mix the Yogurt: Transfer the yogurt in a large measuring cup or any glass with a spout. This will make the pouring in the mold easier. Add the remaining honey and stir until fully combined. Taste and adjust the sweetness as desired. Add the Blueberry puree then lightly swirl using a stick or handle of a spoon. Do not swirl too much, swirl just enough to create a streak.
- Pour in the Popsicle Mold: Pour the mixture in the popsicle mold. Leave at least 1-inch on top, about the line where the handle ends. For mold like this, avoid filling it to the top as you will have a difficulty eating the portion stuck under the handle. If you are using the mold where you have to put the popsicle stick, then you can fill to the top.
- Freeze: Freeze for a minimum 5 hours, but overnight freezing is recommended.
