[VIDEO] Mini Dutch Baby Pancake with Stewed Berries

This Mini Dutch Baby Pancake is not only adorably cute, they are absolutely delicious. Crunchy toasty edge, soft custard like center topped with Stewed Berries and a doll up of homemade whipped cream. A perfect breakfast or brunch option that will make you look forward to waking up in the morning.

What is Dutch Baby?

Dutch Baby are also called as German Pancake, so it’s in the family of pancakes. The batter is made using a blender or by manually whisking the mixture. It’s like a crepe batter with light and runny consistency. It’s thicker than crepe but thinner than pancakes and waffles. It has more like a custard base once baked. It’s like a soufflé that puffs up and collapsed in a matter of seconds. This is why if you plan to Instagram it or take a photo of it, you have to be quick to capture the perfect out of the oven puffy and brown look. Unlike pancake and crepe that are cooked on stove top, this one is baked in cast iron skillet in high temperature to allow the batter to rise and puff up. It’s slightly thin but not as thin as crepe, not too sweet and has a prominent egg taste. So basically, it’s a mashed up between crepe, Pancakes and soufflés. But don’t be scared, this is a very easy recipe, even easier than regular pancakes.

This Dutch Baby are easy to make, even easier than pan cake and waffles. And I guarantee you, there’s less chances that you’re gonna screw up on this. It’s more like a fool proof recipe, so easy you will always get the best looking and delicious Dutch Baby. Let me show you how way it is to make this babies. Let’s get started! 

How is it Different From Pancake and Crepe? 

I love Dutch Baby Pancakes, but then again what’s not to like? The process of making it is so easy, you can do it manually or you can make it in a blender to make it even more easier. The batter is a cross between pancake and crepe. Not as thick as pancake, but also not as thin as crepe. But for me what really makes it different from pancake and crepe is the way that it is made. The batter is just a mixture of 3 simple ingredients: Flour, Sugar and Egg. The flavoring is optional. What makes it different is the is baked unlike pancake and crepe that are cooked on stove top. The physical appearance of Dutch Baby is also different. It has crunchy edge and custard like center, but the best pleasing part for me is the way that it puff up high. It is such a delight to look at it even for only few minutes. I wish they could last longer, but unfortunately not. They will collapse after few minutes o taking it out from the oven. That’s because of the drop in the temperature. So if you want to capture the moment, be quick and snap a photo before they deflate. Don’t worry, it won’t affect the taste, it is still taste great. 

No Cast Iron Pan Needed For This Mini Variation

Dutch Baby Pancake is usually baked in cast iron pan. The 3 variations I posted in my site were all baked in 6-inch cast iron pan. I do have a mini 3-inch cast iron pan but I thought most of you will probably have muffin tins and even if you don’t you can easily find a muffin tin than a mini cast iron pan. 

Why Do We Need To Rest The Batter

Resting the batter allow the batter to get thick. A rested batter produces a puff up Dutch Baby. Minimum 60 minutes, or you can leave it overnight in the refrigerator for baking the following day.

Serving Suggestions

Icing Sugar on top – You can serve this plain with a little bit of confectioners sugar dusted on top. This is just a very simple thing but it does make a good presentation. It makes the dish looks fancy for something so simple and homemade 

Stewed Berries – well, if you wan to add a little bit more treat in this pancake, add some stewed berries on top. Stewed Berries and simply mixed berries with a little bit of sweetener that has been simmered until the Berries juice come out. You can make them using fresh or frozen Berries. There’s several ways that you can use them, check out my video on how to make Stewed Berries. I’ve used for pancakes, ice cream, cakes oatmeal. 

Whipped Cream – want to make it even creamier? Add a touch of whipped cream on top, simple and delicious way to dress it up

Last but not the least, if you are like me who cannot decide, go for all 3 options, or make 2 with icing sugar, 2 with stewed berries and 2 will all o them. Why choose 1 when you can have all? 

Ingredients:

  • 1/2 cup Full Fat Milk
  • 3 tablespoon Granulated Sugar
  • 2 Eggs
  • 1 teaspoon Vanilla Extract 

Optional Ingredients

  • Whipped Cream 
  • Icing Sugar

Stewed Berries 

  • 2 Cups Frozen or Fresh Mix Berries
  • 2 tablespoon Honey
  • Pinch of Salt 

Instructions:

  1. Pour milk in a bowl. Add sugar then stir. Add eggs, salt and vanilla extract and whisk. Sift the flour and mix until the batter is smooth. The batter will be light and runny, that is expected. Cover with plastic wrap or any cover and refrigerate for at least 1 hr. You can also make this at night and leave the batter overnight in the refrigerator. Chilling helps the mixture relax produces a thicker batter 
  2. Preheat oven to 425º F (220ºC).
  1. Divide 2 tablespoon of unsalted butter into 6 portions. Put the butter in the muffin cavities. Put the pan in the oven for 5 minutes until the butter is melted but not burnt. 
  2. Remove the pan from the oven and pour the pancake batter in the muffin pan with melted butter
  3. Return to the oven and bake for 23 -25 minutes. You will know that it is cool once the pancake puff-up (like crazy!)
  4. Remove from the oven and transfer in a plate. The pancake will deflate in less than 60 seconds, that is expected. 
  5. Make the Stewed Berries: In a pan, add mix Berries, honey (or any sweetener that you want) and pinch of salt. Cook for 5 -7 minutes or until the Berries juice has come out.
  6. Serve: Dust the top with icing sugar then spoon stewed Berries on top. Swirl whipped cream on top.
  7. Enjoy!
