[VIDEO] Spicy Seafood Medley

It’s seafood day! This is one super easy seafood recipe that you can make in 30 minutes, because that’s all I have allocated when I have a busy day. Seafood is a great option for quick meal options, not only they taste great, but most of all they cook fast. In fact, you don’t want to over cook seafood as they can dry out easily. If you are looking for a quick meal option that is filling and delicious, go for seafood or chicken. Reserve the beef some other time. This Seafood Medley comes so quick, thanks to seafood medley mix that you can buy in grocery. The pack used is about 1 lb with a mix of shrimp, mussels (without the shell) and squid. You can also use all shrimp or al shrimp, that would be a real treat. As for being spicy, you can totally adjust the spice level to your preference. I love spicy food (hence my website name SweetNSpicyLiving) and so I often add more spicy spices whenever I cook savory dishes.

I had been busier lately with work and I started making my meals on the fly, you know whatever I have on hand. Something that I do not have to plan just like when creating a posts for the blog. I thought I would create a short post about this, not as elaborate as my full post but enough to give you idea on how you can make it at home. This will be easy and quick recipes that you can make in less than 30 minutes max or even 5 minutes less. We all need a short break from the kitchen, but that doesn’t mean we have to stop making delicious meals to nourish us.

Today’s Quick & Easy Recipe

Are you a seafood lover? Do you like spicy food? Yes, Yes? Then you are in the right place. If you are a seafood lover but don’t like spicy food, easy problem to solve. Just don’t add spicy spices. If you don’t like seafood at all, I have other easy meal ideas in my website that is not seafood, help yourself 🙂

Today’s menu is quick and easy Seafood Medley. You will have plenty of seafood and flavor mingling together in one bowl. It is easy, you can make this in less than 30 minutes. I make this recipe whenever I have a mix seafood on hand, the frozen one as I rarely have fresh seafood straight from the market. I like buying the mix to have variety of seafood in a bag, makes life easier and delicious. My mix have shrimp, squid and mussels (without the shell) which are more than enough for variety.

I love to spice things up when making savory dishes, even more when cooking with seafood. It takes away too much seafood after taste, that kind that is unpleasant. Spices and lemon or lime works wonder on solving this problem. Not all seafood have the strong after taste, but just to be sure season well and add something citrus for freshness.

Seafood Stir_fry

Ingredients:

  • 340g (1 pack) Assorted Seafood. You can also use one type like all shrimp, mussels etc. If using scallops, make sure not to over cook it or it will be mushy.
  • 2 teaspoon Oil
  • 1/2 small Red Onion – thinly sliced
  • 3 cloves Garlic – minced
  • 1/2 teaspoon table Salt
  • 1/4 teaspoon Red Chili 🌶 Flakes
  • 1/8 teaspoon Paprika
  • 1/8 teaspoon Black Pepper
  • 1 teaspoon Sugar
  • 1/2 teaspoon Ginger paste or minced Ginger
  • 1/4 cup Marinara Sauce or Salsa
  • 1 tablespoon Butter
  • 1 teaspoon Lemon 🍋 Juice
  • fresh Herbs (choice or mix of Cilantro, Chives, Parsley, Basil)

Instructions:

  1. Transfer the seafood in a bowl. Add salt, red chili flakes, paprika, black pepper and sugar. If you do not like it spicy, reduce the spicy spices. Heat the pan and add onion and garlic. Saute until the onion is soft. Add seasoned mix seafood. Bring to a simmer for about 5 minutes. Add marinara sauce (or red tomato salsa) and stir. I used homemade tomato sauce which is sweeter and less tangy. Add butter and lemon juice then stir. Add fresh herbs at the end of the cooking time. Taste and adjust seasoning as desired.
