mall Batch M&M Chocolate Chunk Cookies (Makes 4 Bakery‑Style Cookies)

Craving cookies but don’t want a huge batch? These Small Batch M&M Chocolate Chunk Cookies are just right—four perfectly chewy, golden‑edged treats loaded with crunchy M&Ms inside and out. They come together fast, taste like a bakery classic, and satisfy that sweet tooth without overdoing it.

Ingredients
  

  • 1/4 cup unsalted Butter softened but still cold
  • 1/4 cup + 1 tablespoon packed Brown Sugar
  • 2 tablespoon Granulated Sugar
  • 1 Egg Yolk at room temperature
  • 1 teaspoon pure Vanilla Extract
  • 2/3 cups All-Purpose Flour
  • 2 tablespoon unsweetened Natural Cocoa Powder
  • 1/2 teaspoon Baking Soda
  • 1/4 teaspoon Baking Powder
  • 1 teaspoon Instant Espresso Powder
  • 1/4 teaspoon Salt
  • 1 tablespoon Full Fat Milk
  • 1/3 cup Dark Chocolate Chunks + M&M
  • 1/4 cup Chopped M&M
  • 1/4 cup melted Dark Chocolate – optional

Method
 

  1. Pre-heat the oven to 350F
  2. Cream the Butter: In a large bowl using a hand-held or stand mixer fitted with a paddle attachment, beat the soften butter
  3. Add granulated sugar, brown sugar, vanilla extract and espresso powder
  4. Beat the mixture about 3 minutes until it gets crumbly. Scrape down the sides and bottom of the bowl as needed.
  5. Add the egg yolk and beat agin until incorporated
  6. Add dry Ingredients: Add flour, cocoa powder, baking soda, baking powder and salt. Mix until it forms into a dough.
  7. Add coffee or milk to slightly loosen the cookie dough
  8. Add Chocolate: Add chocolate chunks and M&M and mix until distributed. Add milk or espresso to slightly thin out the batter.
  9. Divide the cookie dough into four (4) portions
  10. Shape: Shape the cookie dough into balls
  11. Roll in chopped M&M
  12. Chill: The cookie dough will be slightly sticky. Cover dough with plastic wrap and chill for 30 minutes while you pre-heat the oven.
  13. Bake at 350F for 13 - 15 minutes.
  14. Let Cool on the pan.
  15. Make it Triple Chocolate: Once the cookie is completely cooled, drizzle melted chocolate on top. You can use semi-sweet, dark or even white chocolate.
