Simple, easy chocolate cookie recipe for any day of the week.
So … Chocolate. Do you like chocolate (I hope so)? Today we are going to explore the world of chocolate, so I am just making sure we are on the same page here. If you love chocolate like I do, then stay with me and keep me company as I take you to the world of decadent soft and chewy triple chocolate cookie. Triple is how we are going to roll today, it cannot get anymore chocolate than that.

How often do you make chocolate chip cookie? Almost all bakers have their own variation of chocolate chip cookie, form soft, chewy, tall, thick and crunchy. I have my fair share of making chocolate chip cookies, but surprisingly I’ve never shared any pure chocolate version of any of my chocolate chip cookie recipe. So today, I am going to correct that. I am making sure that you get the chance to see how easy it is to make a decadent soft and chewy chocolate chip cookie .. Triple chocolate if I may stress.

This recipe was inspired by my Red Velvet White Chocolate Chip Cookie. You must be thinking how are they related. They are actually almost the same, except for the color and the chocolate chips. Red velvet desserts are basically chocolate flavored dessert that has been colored to transform it to velvety red color. But the base Ingredients uses flour, egg, milk, oil and cocoa powder.

Cocoa powder is the common denominator among all the red velvet recipe. It’s what give the cake, cookie or bars the chocolate flavor. The food coloring itself does not add flavor but it gives an attractive color that makes the red velvet stand out from the rest of the cake. So basically, when you remove the food coloring, you will end up with a chocolate dessert.

That is how this chocolate cookie came about. I tweaked my red velvet white chocolate chip cookie by removing the food coloring and adding milk to the recipe. A very minor change but the outcome was a soft and chewy chocolate cookie. Say goodbye to dry chocolate cookie, with this recipe you will be assured of a soft and chewy cookie. I had this cookie left on room temperature for 4 days and the cookie stays soft and chewy. We love soft any chewy, bring it on 🙂

Double or Triple Chocolate
I am giving you the choice, you can make to double chocolate or triple chocolate cookie by drizzling some melted chocolate on top. Not that I am trying to influence you, but triple is definitely the way to go for a more decadent chocolate cookie. But in the end, even if you skip the melted chocolate on top, the cookie is still as delicious and satisfying for a quick chocolate craving.

This cookie is an everyday cookie that you can make in less than 1 hour, but I guarantee you, this cookie can disappear as fast as you made them. Soft, gooey melt in your mouth cookie, what’s not to like about that? Let me show you how to make this cookie. Let’s get started!

- Pre-heat the oven to 350F
- Cream the Butter: In a large bowl using a hand-held or stand mixer fitted with a paddle attachment, beat the soften butter

- Add granulated sugar, brown sugar, vanilla extract and espresso powder

- Beat the mixture about 3 minutes until it gets crumbly. Scrape down the sides and bottom of the bowl as needed.

- Add the egg yolk and beat agin until incorporated

- Add dry Ingredients: Add flour, cocoa powder, baking soda, baking powder and salt. Mix until it forms into a dough.

- Add coffee or milk to slightly loosen the cookie dough

- Add Chocolate: Add chocolate chunks and M&M and mix until distributed. Add milk or espresso to slightly thin out the batter.

- Divide the cookie dough into four (4) portions

- Shape: Shape the cookie dough into balls

- Roll in chopped M&M

- Chill: The cookie dough will be slightly sticky. Cover dough with plastic wrap and chill for 30 minutes while you pre-heat the oven.

- Bake at 350F for 13 – 15 minutes.

- Let Cool on the pan.
- Make it Triple Chocolate: Once the cookie is completely cooled, drizzle melted chocolate on top. You can use semi-sweet, dark or even white chocolate.

These cookies keep their soft, chocolatey texture when stored properly. Place them in an airtight container at room temperature for several days ( I tested 4 days and was still great), or refrigerate for longer freshness. For make‑ahead convenience, you can freeze the baked cookies and thaw as needed without losing flavor or texture.

Makes 6 Large pieces (about 56 grams each) or 8 medium pieces
