I have something for you. I call it Fresh ApplePancake “Donut” but it is really not a real deep fried donut that we love or the plain pancake that we have for breakfast. Looks like mini donut but instead of more dough it uses fresh apple coated in pancake batter. I was debating whether to call it Apple Pancake Bites but I thought Apple “Donut” sounds more interesting. Looks could be deceiving 🙂 A donut that is not a donut, a pancake that is not a pancake. Whatever this is, it is delicious 🙂 trust me
Anyway, it is not an original idea. I’ve seen people do this too and I was curious about it. It does look nice and it was actually delicious. I really love it. For some reason, I did not taste the fresh slice of apple as much as I expect I would. Is that good or bad? Depends if you like cook Apple.

Some people do not like the taste of apple when cook or baked, and some love it. I wouldn’t say I am head over heels with it but I enjoy small amount of Apple desserts. In fact, in the coming weeks, I will be sharing few more Apple treats to celebrate Fall season. That, and probably some pumpkin desserts too because why not? People are all over Apple and Pumpkins as soon as Fall starts.

This recipe is so much fun to make. This is so easy maybe this would not even pass a recipe. To make the process even simpler, I used my favourite Buttermilk Pancake mix.

You can use any pancake mix, store bought or homemade. I left some of my pancake recipes in the featured section to give you options for the pancake batter.

Now let’s talk about the star of the show, the Apple! What type of Apple should you use? You can use Granny Smith if you prefer a firmer more tart apple, or golden delicious for a not so tart apple. I would avoid apple that are on the soft mushy side, crunchy and firm are the way to go.

I used a small apple just so it is juts a perfect size for a single serving. it is really small, almost like a kids size apple that is even smaller than Granny Smith. You can use large apple but you will have to double the size of the pancake batter.

Now, the consistency of the pancake batter. You’re aiming for a slightly thick batter because you want the batter to stick and fully coat the apple. As I mentioned, I used ready mix Buttermilk pancake and the only thing I need to add was milk. 1/3 cup of buttermilk pancake mix and 1/3 cup milk, basically 1:1. You may want to adjust the liquid, add gradually and add more as needed.

The amount of liquid could slightly vary depending on the ingredients in your pancake mix. Mine uses oat flour with flax seed which requires more liquid. Anyway, it’s a pancake, don’t make a fuzz about it. You’ll be fine 🙂 the good thing about pancake is that it is more forgiving than cake the requires baking. You can still adjust the batter as you go I like cakes which could be trick.

The cinnamon sugar coating is optional. You can make it without it, but I highly recommend you do. It’s basically granulated sugar and cinnamon powder. It really made a huge difference in taste so I would say go for it. Toss the cooked apples in the mixture while it is still hot. What I like to do it to add small amount of butter in the pan before I take out the apple. This way, the apple exterior gets buttered and will make it easier for the cinnamon sugar to stick.

Last but not the least, the dipping sauce. Well, it’s not really a sauce that you need to cook. I used plain Almond butter but any nut butter will work. Make sure it is in a thin consistency so that it is easy to dip in. Another options are caramel sauce and melted dark chocolate.

Ingredients:
- 1 Apple
- 1/2 cup Pancake Mix
- 1 1/2 tablespoon granulated Sugar
- 1/4 teaspoon Cinnamon Powder
- 1 tablespoon Butter
- Nut Butter optional for dipping
Instructions:
- Prepare the pancake batter. You can use a ready mix pancake or make your own from scratch.
- Slice the apple in rounds about 1/4-inch thick. Remove the center.
- Dip each piece in the pancake batter.
- In a heated pan, add 1/2 tablespoon batter. Make sure the entire pan is coated with butter.
- Cook the dipped apple in the pan until the pancake batter is fully cook. About 3 – 5 minutes in medium heat. If you gently lift it and it is no longer sticking, then it is ready to flip.
- Before removing from the pan, add the remaining butter to coat the apple. This will help the cinnamon sugar stick better.
- Toss the cooked apple in cinnamon sugar.
- Arrange in a plate and serve with nut butter or melted chocolate for dipping. You can also drizzle it with honey of maple syrup if you prefer something sweeter.
Serves 1

Recipe Notes:
- For pancake batter, both store-bought ready to use pancake mix or homemade pancake mix will work
- For the apple, Granny Smith, honey crisp, golden delicious or something similar will work
- For dipping, nut butter, melted chocolate are great option. For extra sweet, you can drizzle honey of maple syrup.
- The bigger the apple, the more pancake batter is needed. Adjust accordingly.
