I have to admit I do not find it interesting at all that is why I stayed away from making it for a long time. I wouldn’t say I am not curious how it taste, because I am.

Not sure if you’ve heard about Croissant Cookie or Crookie. It is basically a plain croissant filled with cookie dough and topped with more cookie dough. This became a huge thing around Instagram or social media in general. People are crazy trying it. It started with one cafe and now a lot of cafe had to join the ban wagon of Crookie. That’s one way to survive the food business, you have to keep up with what’s in.
There are places in Vancouver that sell this Crookie, but I was not really keen on going to a cafe to buy it. I was more interested to make it at home. This is my chance to make an edible cookie dough, finally! Just the cookie dough, I am not making the Croissant from scratch.
I bought one pack of Croissants and it contains 12 huge pieces. There’s no way I am able to finish this, but I have a plan in mind when I bought this.

The plan was to freeze the Croissant so they last longer. I have a mission to come up with 12 ways to use Croissant and this Crookie is the 2nd one so far.
Now let’s talk about this edible cookie dough. I have to give credit to Anna Fontanella as this was her recipe. I love her YouTube channel as she makes really interesting recipe and she has a lot of small batch recipes for too, this is one of them. There’s 3 variation for this cookie dough: the original chocolate chip, the double chocolate chip and the funfeti.

I use her recipe as the base and I added an espresso powder and to give it a nice subtle coffee flavor. I was surprised, I actually like how it tasted. At first I only ate a small amount as I still find it weird eating the dough. It does taste good.
The main reason for making this is to use this to make the Croissant Cookie more than eating it on its own. You can eat it immediately, but better flavor and texture I recommend waiting at least 4 hours. This way you will not feel the grainy texture of sugar as it is already fully dissolved and mingled with other ingredients.

You can eat it soft without refrigeration but I like mine slightly cold. I like to shape it into smaller rounds, but you do you and enjoy it as you please.

You must be thinking if you can bake this. If you want to make this recipe for baking, add 1/2 teaspoon of baking powder for the cookie to lift.
Ingredients:
- 50g (6 tablespoon) All-Purpose Flour
- 1/4 teaspoon Instant Coffee/Espresso Powder
- 30g (1 1/2 tabespoon) Unsalted butter
- 2 tablespoon White Sugar (OR mix of 1 tablespoon white sugar and 1 tablespoon brown sugar)
- 1/8 teaspoon Salt
- 30 g (2 tablespoon) Milk
- 2 tablespoon Chocolate chips
Instructions:
- Cook the Flour: Mirowave the flour for 1 minute. Heat-treating the flour kills bacteria and it cooks off that raw flour taste. The flour will clump and this is due to the moisture evaporating. Simply sift it to loosen up the flour. Set aside to cool down. If you are in a hury, refrigerate for 5-10 minutes until completey cooled.
- Alternative: If you do not lke using microwave, you can toast the flourin a pan until the flour turns slightly brown.
- In a sparate bowl, add the melted butter, milk, sugar, salt and instant coffee powder. You can use any flavored instant coffee powder, do NOT use freshly brewed coffee as the dough will be runny. Mix to combine.
- Add chocolate chips to your hearts content 🙂 Use a good quality chocolate as you will be eating this cookie dough without baking.
