Thinking of what meals to prepare everyday is difficult especially if you are cooking for a family. Although I live by myself now, trust me when I say I know how it feels. Even a simple breakfast could be a nightmare if you do it everyday.



Simply Salad
A simple salad with hard boiled egg is my go to if what I want is just something light to keep me until I have time for a full meal. I like adding fruits in the mix, avocado whenever I have some, and fresh greens.
I had been consistently doing YouTube shorts for what meals that I eat in a day. Most of them are very easy meals that doesn’t even require a written recipe for you to be able to make it. If you watch the short video, you will have an idea how to make it, no recipe needed. They are very flexible and you can adjust and tweak it to your liking.
Let’s Eat! High protein Hummus & Egg Bowl
Hummus for a quick snack. You can use homemade or store-bought hummus, any flavor of hummus that you like. I had plenty of mini naan bread bites so I used that, added some slice black olives and my homegrown mix sprouts.
I don’t normally create recipe post for them so they just sit in my YouTube channel. As I look at them, I thought why not share it with you. The videos are maximum 60 seconds only so this will not take a lot of your time, but in that short time, it will give you an idea on your meal preparation.
Let’s Eat! Egg & Asparagus Toast
Asparagus is something that I do not usually have, but when I have them I like using them for a simple toast. I pan toast the bread, topped it with brie cheese, cooked asparagus, scrambled egg and my leftover creamy pesto sauce. I air-fry some par-boiled baby potatoes and served it with tomato and fruits.
The videos are mostly single serving dish but you can easily scale it up. Use the video as a guide and do as many as you wish. A lot of these meals require cooking more than baking so it is more forgiving. You can easily change it up to your liking.
Let’s Eat! Potato & Mushroom Tortilla Quiche
A quiche using tortilla is a simple hack if you do not want to go through the hazel of making a pie crust. I used medium size soft tortilla to go in my 6-inch glass baking dish. For the filling, I par-boiled baby potatoes and seasoned it. I then added it in the baking dish along with sautéed mushroom. I then pour custard (egg + milk) and topped it with more cheese. Bake at 350F for 20 – 30 minutes or until the egg is set. So filling!
I will not be detailing the instructions for this meals. They are really very easy. Simply watch the video and the video will show you how to make it. If there are any special instructions, I’ll mention it but otherwise this is not going to be like my usual recipe post complete with ingredients list and instructions.

Back to basic! Avocado on toast served with mix greens and fresh fruits. Just that!
