[VIDEO] Brie Cheese & Egg Savoury Crepe

Today we are making savoury crepe. This crepe is so easy to make you can make this in 15 minutes (or less). This is a simple Brie Cheese and Egg Savoury Crepe that is great for breakfast or brunch.

I feel that savoury crepe is not getting enough spotlight when it comes to crepe. Most people (including me) are more familiar and drawn to sweet crepe. I mean, can you blame us? Who wouldn’t be drawn to a crepe filled with fresh strawberries and whipped cream? Or a generous smother of Nutella and fresh slices of banana? You get what I mean.

Today, let us set aside the sweets, just for the meantime. Don not worry, we are not ditching it all together. I might even make a follow up crepe video for sweet crepe next time.

Brie Cheese and Egg Crepe

About This Recipe

This is a single serving recipe, as always 🙂 but you can easily scale it up by doubling the ingredients. This is a very forgiving recipe so do not worry too much that this is only a single serving recipe. The key thing to making crepe is the batter consistency. You want it thin but not too thin that it will easily break. You also do not want it thick, or you will end up with a pancake. Pancakes are great, but we are not making pancake. So keep it thin.

Super Basic Ingredients

This crepe uses very basic ingredients. You can consider this as a blank canvas and make variations from here. You can even make this to a sweet crepe by just removing the savoury ingredients like herbs and spices and adding sweetener. Egg, milk, flour and the base ingredients. You can change the mix of spices or fresh herbs.

Fill It Up

You can fill the crepe whatever you like. I wanted to. keep it simple so I just opted for egg and brie cheese which was really great. I love the creaminess of brie cheese, never failed to disappoint me wherever I used it. I added fried egg with runny center, always my preference. I used a simple lemon poppy seed dressing to finish it off. You can use any dressing that you like. If you have ranch, that sounds like a good pairing for this savoury crepe.

Variations

You have a lot of options when it comes to variations. These are just few of what I have in mind but certainly, do whatever you like.

  • Mushroom and Cheese will be a great vegetarian option. Simply sauté the mushroom and top with grated cheese. You can broil it just to melt the cheese.
  • Mushroom and Asparagus
  • Ham, Egg, Cheese
  • Bacon and Scrambled Egg
  • Turkey & Sun-dried Tomato

Ingredients:

  • 2 tablespoon Full Fat Milk
  • 1 Egg
  • 1 1/2 tablespoon All-Purpose Flour
  • 1/2 teaspoon chopped Chives
  • 1/8 teaspoon mix spices (salt, garlic powder, paprika, cayenne pepper, black pepper)
  • 1/2 teaspoon unsalted Butter
  • 3 slices Brie Cheese

Instructions:

  1. Mix milk, egg, all purpose flour, spices and chives. If using blender, add the chives after mixing all ingredients.
  2. In a heated pan, add the butter and melt. Pour the crepe batter and swirl the pan to distribute the batter.
  3. Cook for 2-3 minutes or until the sides are set and the crepe can be lifted without sticking.
  4. Transfer in a serving plate.
  5. Cook the egg in the same pan, add butter or oil as needed.
  6. Serve: Add the brie cheese in the center of the crepe and top with the egg. Fold all the sides towards the center.

You can change the filling and add cold cuts like turkey slices or crispy bacon. Sautéed mushroom and spinach is also a nice vegetarian option.
