[VIDEO] Cinnamon Apple Pancake Bites

Pancake is one of the easiest delicious treat you can make for breakfast. You can make your own pancake mix or even use a store-bought if you are in a hurry. I’ve made pancakes quite a lot of time and all of them (at least the one in my blog) were made from scratch. Pancake mix is so easy to make so making it from scratch is a good idea.

Homemade or store-bought, it’s your call

For this recipe though, I used a Buttermilk pancake mix that was a gift from a friend. It was the Flourish Buttermilk Pancake mix which was 100times better than the one available in the grocery. It is more expensive though but the quality of the ingredients used in the mix was really good and worth the price. This is the only pancake mix that I buy so far and for me, that is a huge thing. I prefer making things from scratch but when I find something really really good, I don’t mind trying it. In the end, I give the decision to you. Homemade or store-bought, it’s your call. I’ve made this both using pre-mix pancake and homemade pancake mix and they turned out both great. It just boils down to how much time you have on hand.

Just 5 main steps to make this pancake

The first step is to make the caramelized apple. This is just cooking the diced apple with sugar until the apple is soft. If you do not want to cook the Apple, you can use it fresh but just make sure to chop it really finely or even better grate it. This way it cooks easily as pancake require only few minutes to cook. You can add as much or less sweetener as you like. I kept mine at 1 tablespoon of sugar as the apple I got was fairly sweet. If you are using a tart apple like Granny Smith, you might need to add extra sugar. You can make this ahead of time, say 1 day ahead and keep it refrigerated. I am making a single serving pancake so I only used half of large Apple. Make as much as you need as this refrigerate well.

Next step is to make your pancake mix, that is if you are making it from scratch. If you are using store-bought, then you are 1 less step. The pancake mix I have only require liquid, I used milk but even water will work as well. It does not require egg which for me was a bonus. It also doesn’t require any sweetener but even without sweetener, it taste just right to my liking. Make your pancake batter as per your recipe instructions. Now let’s make the Cinnamon Sugar next. Simply mix the granulated sugar with the cinnamon powder. If you like a stronger cinnamon flavor, add more. I prefer a mild flavor so I only add 1/4 teaspoon for 1 tablespoon of sugar.

We have all the components that we need. Let’s cook the pancake. Add 3/4 of the caramelized apple to the pancake batter and mix. I like to reserve small amount of the caramelized apple for topping later. Cook the Pancake in small portion. I used a small ice cream scoop to measure it. Heat and butter the pan then cook the pancake. Once you can see bubbles forming on top of the mini pancake, you can flip it. When you are ready to take it out of the pan, add more butter on the pan and brush the pancake on both side. This will help the cinnamon sugar stick to the surface better.

Toss the pancake and cinnamon sugar making sure to coat both sides of the pancake. That’s it!

Serve and enjoy with nut butter dipping or melted chocolate. I like serving this warm with a drizzle of Almond butter on top.

What Type of Apple to Use

Now let’s talk about the star of the show, the Apple! What type of Apple should you use? You can use Granny Smith if you prefer a firmer more tart apple, or golden delicious for a not so tart apple. I would avoid apple that are on the soft mushy side, crunchy and firm are the way to go.

Ingredients:

  • Pancake mix (homemade or store-bought)
  • Milk
  • Butter (for cooking pancakes)
  • Caramelized Apple
    • 1 Apple
    • 1 tablespoon granulated sugar
    • 1/4 teaspoon cinnamon powder
  • Cinnamon Sugar Coating
    • 1 tablespoon Granulated Sugar
    • 1/4 teaspoon teaspoon Cinnamon Powder

Instructions:

  1. Cook the Caramelized Apple: In a pan, add diced Apple, sugar and cinnamon powder. Cook in low heat until the Apple is soft. Set aside.
  2. Make the pancake batter by mixing the pancake mix and liquid. Follow the instructions of your pancake batter mix and add required amount of liquid. You can also make pancake mix from scratch or use your own recipe.
  3. Add the caramelized Apple to the pancake batter. Set aside small amount for toppings later. Heat the pan and add butter.
  4. Heat the pan and add butter. Use small ice cream scoop or 1 1/2 tablespoon to measure the mini pancakes. Cook both sides and flip.
  5. Add more butter before taking out from the pan.
  6. Toss in cinnamon sugar: Mix sugar and cinnamon powder. Toss the cooked mini pancakes.
  7. Serve as is or with dipping sauce like melted chocolate, nut butter or drizzle of maple syrup.
