Thinking of what meals to prepare everyday is difficult especially if you are cooking for a family. Although I live by myself now, trust me when I say I know how it feels. Even a simple breakfast could be a nightmare if you do it everyday.

Broccoli and Cheese Omelette
This simple omelette is great way to sneak in veggies in your breakfast. Simply steam and chop broccoli (even the stems!) and fill the egg with it and some cheese too, lots of cheese please!
I had been consistently doing YouTube shorts for what meals that I eat in a day. Most of them are very easy meals that doesn’t even require a written recipe for you to be able to make it. If you watch the short video, you will have an idea how to make it, no recipe needed. They are very flexible and you can adjust and tweak it to your liking.
Brioche Egg Sandwich
What a better way to use a buttery Brioche bread than to stuff it with soft and fluffy scrambled egg. The secret here is a generous smothering of garlic butter to toast the exterior of the bread and cooking the scrambled egg in butter. Make sure if you are using a stainless steel pan that the pan is really hot before adding the butter. The butter will melt quickly, take this opportunity to pour the beaten egg then give it few seconds to took before moving the egg around. Slowly stir the egg, pushing it to the side and repeating the process until you have a mound of egg. Add lots of grated cheese while the egg is slightly wet. That’s it! Stuff it in the toasted brioche and enjoy!
I don’t normally create recipe post for them so they just sit in my YouTube channel. As I look at them, I thought why not share it with you. The videos are maximum 60 seconds only so this will not take a lot of your time, but in that short time, it will give you an idea on your meal preparation.
Tomato, Spinach & Egg
This egg dish is a light breakfast loaded with good stuff. We are talking about lots of garlic (or less if you do not like garlic), fresh spinach and slice cherry tomato. I cooked the egg soft but feel free to cook it the way you like it.
The videos are mostly single serving dish but you can easily scale it up. Use the video as a guide and do as many as you wish. A lot of these meals require cooking more than baking so it is more forgiving. You can easily change it up to your liking.
Sweet & Savory Toast
If you cannot make up your mind whether you like sweet or savoury, make this sweet and savoury toast. This is so easy, great for snack if not for breakfast. I used a sourdough bread and top half with scrambled egg and the other half with almond butter and sunflower seeds.
I will not be detailing the instructions for this meals. They are really very easy. Simply watch the video and the video will show you how to make it. If there are any special instructions, I’ll mention it but otherwise this is not going to be like my usual recipe post complete with ingredients list and instructions.
Feta & Pesto Egg
I am obsessed with pesto especially with adding it to fried eggs. Pesto made this fried egg delicious, such a simple tweak and it goes a long way. Serve with fresh veggies and fruits on the side.
