Thinking of what meals to prepare everyday is difficult especially if you are cooking for a family. Although I live by myself now, trust me when I say I know how it feels. Even a simple breakfast could be a nightmare if you do it everyday.
Let’s Eat! Egg Salad Sandwich
I will never get tired of egg salad. A very easy sandwich spread that you can make in less than 15 minutes. I made this sandwich when I came home and I was so hungry. I did not have the energy to make something more elaborate and hence this egg salad sandwich. No regrets because I really did enjoy this. I boiled the egg and mashed it with mayonnaise and mustard then added some spices and seasonings. I used sprouted bread, fresh greens, slice hard boiled egg because I like texture in my sandwich and filled it with the egg salad. Yum!
I had been consistently doing YouTube shorts for what meals that I eat in a day. Most of them are very easy meals that doesn’t even require a written recipe for you to be able to make it. If you watch the short video, you will have an idea how to make it, no recipe needed. They are very flexible and you can adjust and tweak it to your liking.
Let’s Eat! Airfryer Egg In a Bagel Hole
Air-fryer change my life! I love using my air-fryer to make quick breakfast like this egg in a bagel hole. To do this, cut the bagel press the center to create a larger hole. Butter both slices of bagel. Put parchment paper in the air-fryer then add grated cheese before putting the buttered bagel. Crack an egg in the hole and sprinkle with cheese. Air-fry at 350F for 10 – 15 minutes or until the cheese is melted and the egg is cook to your liking.
I don’t normally create recipe post for them so they just sit in my YouTube channel. As I look at them, I thought why not share it with you. The videos are maximum 60 seconds only so this will not take a lot of your time, but in that short time, it will give you an idea on your meal preparation.
Easy Breakfast Idea: Tomato Jam & Egg Toast
Not your usual jam. Have you tried tomato jam? Sounds weird I know. I was curious about so I made one to try. You do not have to make it if you don’t want extra work. You can use any jam of your choice instead. I was surprised that I like the taste of it. I guess the sweet and savoury taste of the jam paired with cream cheese and scrambled egg were like match made in heaven. They just work so well to my liking.
The videos are mostly single serving dish but you can easily scale it up. Use the video as a guide and do as many as you wish. A lot of these meals require cooking more than baking so it is more forgiving. You can easily change it up to your liking.
Let’s Eat! Avocado and Scrambled Egg Taco
Tacos for breakfast? Oh Yes please! Start by toasting the tacos on stove top. This will give a nice charred on the tortilla. Mashed avocado and cook scrambled egg and arrange on top of the tortilla. Garnish with tomato salsa, or any garnish that you like. This is Taco any day of the week.
I will not be detailing the instructions for this meals. They are really very easy. Simply watch the video and the video will show you how to make it. If there are any special instructions, I’ll mention it but otherwise this is not going to be like my usual recipe post complete with ingredients list and instructions.
Baked Croissant Casserole
Looking for a make ahead breakfast? This one is a good candidate. Simply cut the croissant is bite size pieces and soak in custard mixture (egg and milk). Top with anything that you like. I used mushroom, sun-dried tomato, diced turkey, jalapeno pepper and cheese. Bake at 350F for 15 minutes or until the cheese is melted.
