Today we are making a twist on classic French Toast. If you made French toast before you know the drill. Make the custard mixture by mixing egg, milk, sugar and pure vanilla extract. Soak the bread, whatever kind of bread you are using and then pan fry it in pan with butter. Easy breezy!
This recipe is somewhat similar but not quite. This was inspired by the milk bread recipe that I saw in YouTube before. It was not called French toast, but I would like to call my version French Toast, let’s go with that, ok?

A Twist on Classic French Toast
French Toast without any argument is one amazing breakfast if you are not watching your diet 🙂 From the traditional custard French toast, we are making a twist and making it into a somewhat tiramisu version. So what is different in this French toast version?
First of all, there is no soaking in custard for this version, but feel free to go with the traditional if that is your preference. Toast the bread like you would when making traditional French toast. However, if you want to try this simplified, no custard version, then let’s talk 🙂

The bread is toasted in the pan with melted butter until both sides are nicely browned. Then we pour the milk, yes! Generously pour the milk to the point that the bread is swimming in it. We want the bread to fully soak and cook in the milk bath. I used about 1/4 cup but sometimes I could end up using more depending on the age and type of bread I am using. There is no right or wrong way to make this. After all, the only thing you have the remember, soak the bread in the pan and cook it there. Sounds easy, right?

Once done, you can pour the mascarpone cream on top. Be generous, go ahead and pour. The mascarpone cream is more than enough to make 2 or maybe 3 French toast depending on how generous you want to be. A dusting of cocoa powder on top to give it the Tiramisu look 🙂

Why Small Batch
Small-batch baking is all about enjoying fresh, homemade treats without the guilt (or leftovers). It’s ideal for experimenting with new recipes and flavors without the pressure of producing a large quantity. This French toast is more than enough for one serving for one person. I like that I do not have to worry about left over. because this recipe is so easy, you can make this the same day few minutes before serving it. You can make the mascarpone cream a day ahead to make the process even fast the day you want to enjoy it. I would highly recommend that you assemble everything the same day you want to serve it, especially the dusting of cocoa powder. If you dust the cocoa powder and keep it in the refrigerator, the cocoa powder will absorb the moisture from the mascarpone cream and it would not look as presentable and appetizing.

Do NOT Over Whipped the Mascarpone Cheese
Mascarpone is a sweetened cheese that can make or break your tiramisu. The high fat content of the mascarpone causes it to curdle easier than other types of cheeses and creams. When your mascarpone is over-whipped, it will start to resemble the texture of cottage cheese. To avoid this from happening, make sure to use cold mascarpone cheese and whip it only until mix with the sugar and cream. You can manually mix it with a spatula to scrap the sides of the bowl and to do few more fold.

Use a whisk to whip the cream
Whether you are using a hand mixer or a stand mixer, whisk the cream using a whisk attachment.This will increase the amount of air going into the whipped cream and aid in the whipping process.

French Toast Ingredients:
- 1 tablespoon Butter
- 1 thick slice of Loaf Bread (Brioche Bread or Challah Bread are great options)
- 1/4 cup Full Fat Milk
- Cocoa Powder for dusting
Mascarpone Cream Ingredients:
- 125ml Whipping Cream
- 110 grams Mascarpone Cheese
- 25 grams Icing Sugar
- 1/2 teaspoon Vanilla Extract (optional)
Instructions:
- Make the Cream Filling: Pour the cold whipping cream in the bowl. Sift the icing sugar. Add pure vanilla extract. Whisk until soft peaks. Add the mascarpone cheese and mix until just combined.
- Cook the French Toast: Melt the butter in a pan and toast both sides of the sliced bread. The bread should be soak with milk inside out. Add more milk as needed. If you are using day old bread, this will require more liquid. Cook in low heat until the milk evaporates.
- Serve: Transfer the French toast in a serving plate. Spread with the cream filling. Dust cocoa powder on top before serving.
Serves 1
