This dish hails from the vibrant cuisine of Vietnam, known for its fresh ingredients and bold, aromatic flavors. The best part? It’s surprisingly easy to make at home, even if you’re new to Vietnamese cooking. This is my favorite dish to order when I go to Vietnamese restaurant. Since I do not do that as often anymore, being able to make this at home was really great. Super easy and budget friendly.

The Best Chicken Part to Use
When it comes to making Vietnamese Lemongrass Chicken, most people prefer using chicken thighs, me included. They’re juicy, flavorful, and tend to stay tender during cooking. You can use boneless, skinless thighs for convenience, but bone-in thighs work great too if you have a little extra time for cooking.

Tips for Grilling
Grilling the chicken adds a fantastic smoky flavor. If you have a grill, preheat it to medium-high and cook the chicken for about 5-7 minutes per side until fully cooked. No grill? No problem! You can use a grill pan on your stovetop or even bake the chicken in the oven at 375°F for about 20-25 minutes. Either way, you’ll get delicious results. Oh, if you have air-fryer, you can use that too.

The Dipping Sauce
No Vietnamese Lemongrass Chicken is complete without a dipping sauce. The traditional sauce, known as Nước Chấm, is a perfect blend of sweet, sour, salty, and spicy flavors. It typically includes fish sauce, lime juice, sugar, garlic, and chili. This sauce adds an extra layer of flavor that complements the marinated chicken beautifully. This sauce taste so good you can use it with other grilled dish.

Ingredients:
- 4 boneless chicken thighs
Lemongrass Chicken Marinade:
- 1 stalk lemongrass
- 2 cloves garlic
- 1 small shallot
- 1 tablespoons fish sauce
- 1 tablespoons dark soy sauce
- 1 tablespoons sugar
- 1 tablespoons water
Nuoc Cham Dipping Sauce:
- 1 clove garlic
- 2 tablespoons fresh lime juice (approx. 1 lime)
- 6 tablespoons hot water
- 2 tablespoons + 1 teaspoon sugar
- 2 tablespoons fish sauce
- Optional: grated carrots, 1 birds eye chili pepper
Instructions:
- Prepare the Marinade: remove that hard layer of the lemon grass. Using something heavy, gradually smash the lemon grass to extract flavor. Finely chop the samhed lemongrass, garlic, and shallot. Mix with fish sauce, dark soy sauce, sugar, and water in a bowl. Taste and adjust as desired before adding the chicken. Add chicken thighs and marinate for 30 mins to 1 hour at room temperature or overnight (recommended).
- Grill the Chicken: Remove excess marinade from chicken. Lightly oil and grill over medium heat, starting skin side down. Grill for 10 – 12 mins, turning as needed for even cooking.
- Make Nuoc Cham Dipping Sauce: Mix lime juice, hot water, sugar, fish sauce, and optional ingredients until sugar dissolves. Taste and adjust as desired.
- Serve and Enjoy: Let chicken rest before slicing. Serve with vermicelli noodles or rice, vegetables, and Nuoc Cham.
