Today we are making a no yeast bread bites, I call it Cream Cheese & Jalapeno Yogurt Bread Bites. This follows the concept of no yeast yogurt bread that had been circulating online. You know those recipes that calls for only 2 ingredients, flour and yogurt. This one is not 2 ingredients not to m ake things difficult for you. In fact, it is the reverse. By using a more available baking ingredients, this recipe will be much easier for you to make.
Does making breaad using base ingredients flour and yogurt works? Does it work or was it just a hype? I can happily say that, YES! it does work. To set our expectation right, expect a chewier, tangy bread rather than soft and fluffy like dinner rolls. Not teh same, but it is good in a different way. I was surprised how much I love it. Sofar, this is my favorite recipe using flour and yogurt as base for the bread. I’ve done quite a few of them with a little tweak here and there, but this one .. LOVE, LOVE, LOVE!

A No Yest Yogurt Bread
People are going crazy over the yogurt bagel, bread, pizza. The main bread dough was made using self-rising flour and plain greek yogurt, all the other ingredients such as the toppings are totally optional. You can make it plain, have some sweet or savory stuffing or add toppings.
So how does it work if there is no leavening agent in the recipe? Instead of yeast, we are using baking powder to give the bread a lift. Since we are not using self-rising flour that already have mixed in leavener, we have to add it separately. I assume more people will have all-purpose flour rather than self-rising flour so this recipe makes it easier to make in terms of ingredients. Now, if you have self rising flour, then by all m eans use it and skip the bakign powder but do not skip the extra salt. We need extra salt to give the bread a taste.
Yogurt replaces a lot of ingredients in traditional bread. It replaces the egg and milk or water. Yogurt is basically is produced from fermented milk, so there goes your milk component. Although greek yogurt are thicker and have lower water content, it still have a lot of moisture that replaces the liquid when making bread.

The Texture to Expect From This Yogurt Bread Bites
Bear in mind though that you will NOT get the same bread texture that uses the common bread ingredients. The texture will be different, the taste will be different. This is as good as it gets as a substitute when you do not have yeast or you have a very minimal ingredients. It may not be the perfect bread texture that we are all used to, but I am telling you, it is good especially when you serve it warm. The exterior will be crunchy, the bread has a chewy texture and tangy taste. Yum!
This is more like a thin sour dough bread, you can taste the tangy taste of the yogurt like a fermented bread. This is not going to be like the dinner rolls with soft and fluffy texture that we all love. Ingredients for Cream Cheese and Jalapeno Yogurt Breat Bites
Just like how I listed the ingredients for my No Yeast Sandwich Bread and No Yeast Pizza, No Yeast Bread Rolls. I am also going to do the same for this post. To better understand how this recipe works, we have to understand the ingredients. Let’s put our nerd glasses on and let the class begins.
- All-Purpose Flour – To make this recipe easier in terms of ingredients on hand, we are using all-purpose flour instead of self rising flour. If you have self rising flour, you can use it with teh same measurement.
- Plain Greek Yogurt – Plain Greek yogurt is simply plain yogurt that has been further drain to remove the water. This extra process is what makes Greek yogurt thicker than regular yogurt. This basically replaces the egg and milk in traditional yeast bread making. If you only have plain regular yogurt, use less as regular yogurt have more liquid or add more flour.
- Cream Cheese – Small cube goes a long way to fill the bread bites. Alternatively, you can also use sliced sausages, sauteed mushroom or jam fo a sweet variation.
- Cheddar Cheese – This will the bread cheesy with crunchy exterior
- Jalapeno Peppers – For a slight kick of heat. I used picked jalapeno pepper but a fresh one will work too. Remove the seeds if using fresh.
- Baking Powder– Since we are using all-purpose flour as opposed to regular yogurt bread using self rising flour, we need to add baking powder to help the bread rise and not dense. If you are using Self rising flour which already have leavening agent and salt, you can skip the addition of baking powder, but do not skip the extra salt.
- Salt– The salt add taste, do not skip this.
- Everything But the Bagle Seasoing – This is optional, but adds a nice texture and taste to the bread. You can also substitute with a mix of other preferred spices or make your own seasoning mix.

How to Make NO Yeast Shortcut Bagel
It can never get easier than this. Ready? Ok, begin by mixing all the ingredients together. Mix until it forms into a dough. Gather the dough, but do not knead too much. You just want it to come together. The ratio of the flour to yogurt is perfect, you will have a manageable dough to cut and shape. Divide it to 6 portions or less for bigger bread. Simply stuff each portion with cream cheese and sliced jalapeno and roll into a ball.
I use eggwash to brush the top of each bread, then I roll each bread in grated cheese for an ultimate cheese coverage all over. You can also just top the bread with grated cheese. I initially did this then I realized, rolling it in the grated cheese is a better way to do it. For extra toppings, add sliced jalpeno on top, not only for appeal but it also helps people know what theya re getting into when they eat it 🙂 Sprinkle of Everything But The Bagel Seasoning blend to finish it off, love that small amoutn goes a long way.

If you want to make your own self rising flour and you have cake flour, all-purpose flour, baking powder and salt then that’s all you need to make your own self rising flour. Here’s how:
To Make 1 cup Self-Rising Flour:
OPTION 1: This makes a softer bread because of the addition of cake flour
Mix 2/3 cup of all-purpose flour + 1/3 cup cake flour + 1 1/2 teaspoon baking powder + 1/3 teaspoon Salt
Substitute for Self Rising Flour
OPTION 2:
1 cup bread flour OR all-purpose flour, 1 1/2 teaspoon baking powder + 1/3 teaspoon Salt

Can I Use Regular Yogurt Instead of Plain Greek Yogurt
You could but that would require adjustment in the amount of self rising flour. Regular yogurt have more liquid and this will make the dough more wet and sticky. You have to keep on adding a little bit more flour until the dough is no longer sticky.
If you want to use plain regular yogurt. drain the excess water from the plain yogurt using a muslin or cheese cloth. Leave it overnight in the refrigerator to let the extra water drip. Have a large bowl, place a sieve on top, put the muslin or cheese cloth then pour the yogurt. Cover and leave overnight to allow the extra water to drip.

Why is the Dough Too Wet?
Because this No yeast yogurt bread uses a lot of yogurt, the texture of the bread will be dense, heavy and sticky. But if your bread turn out to be really sticky and wet, here are possible reasons:
- One thing I learned from making this several times already, 1:1 ratio always end up with a sticky dough. What always works for me if to have more flour to yogurt. In this recipe, I used 3/4 cup flour to 1/2 cup yogurt. That is 1/4 cup more for flour. This resulted to a very manageable dough that is easy shape without being to sticky.
- The yogurt used could have more water or liquid in it. Some Greek yogurt tends to be lighter while other tends to be thicker. Add a little bit more flour but not too much as it could make the bread tough and dense. Add 1 tablespoon at a time and gather the dough.
- If you only have plain regular yogurt, use less as regular yogurt has more liquid.

Other Ways to Use Shortcut Yogurt Dough
This dough is very versatile, you can use this to make b, pizza, flatbread, buns, pretzels and a lot more. Since the dough is quite heavy and dense, I find that they make great bagels, pretzels and flatbread. Give it a try.

How To Serve This Bread Bites
There is no right or wrong way of serving or enjoyinh this. Treat this how you would enjoy any regualr bread. So eat it the way you like to enjoy it. My preference when I want to keep it simple and plain and have this on its own. The cream cheese, jalapeno peppers and extra cheddar outside is more than enouhg to give this flavor enought to stand on its own. Other ways I like to enjoy this is to pair this with salad, soup or stew for a complete meal.

Tips in making Cream Cheese and Jalapeno Yogurt Bread Bites
- Stir the Greek yogurt to mix the water on top, this will distribute the moisture evenly.
- Mix until all the ingredients are fully combined. If it is too sticky, add 1 tablespoon flour and mix again. Careful in adding too much flour as the bread could get too dense.
- Avoid adding too much flour as it could result to a dense tough bread. This is why it is important to follow up #2
- The dough will look crumbly and dry at first, just keep on mixing do not add more yogurt. It will eventually come together. Expect a soft and dough. This is not going to be like any dinner or bread rolls.
- Do not use electric mixer. It is better to do it manually so you can avoid over mixing and you can feel the texture of the dough.
Flour to Yogurt Ratio
I do not follow the 1:1 ratio that more recipe do. I tried it several times and it always (without any exception) end up too sticky prompting me to add more flour. What really worked for me is the having more flour than yogurt. 3/4 cup AP to 1/2 cup Yogurt is my starting point. With this measurement, I never had to add extra flour. The dough is manageble for shaping and handling. The bread is soft and not too dense, just perfect!


Homemade Yogurt Cheese Bread Bites (Easy 2‑Ingredient Dough)

- Pre-heat oven to 350F.
- In a bowl, transfer the all-purpose flour, plain greek yogurt, baking powder & salt. Using a sturdy spoon, mix until it starts to come together then use your hands to further gather the mixture to form into a dough. Transfer in a floured surface.
- Divide the Dough: Divide the dough into 6 equal portions or as close sizes as possible.
- Stuffed: Flatten the dough and stuff with cream cheese & 1 sliced jalapeno peppers. Roll into a ball, pinch the sides to seal the dough.
- Top with Cheese: Brush the top with eggwash. Roll in the grated cheese or sprinkle cheese on top. Put 1 sliced jalapeno on top and sprinkle with Everything but the Bagel seasoning ( if using).
- Bake in the middle rack for 30 minutes, rotating the baking sheet midway through baking ( at 15 minutes time). Remove from the oven.
- Let cool slighlty before serving. Cooling will enhance the texture of the bread, so this is a MUST.

Storage:
Since this uses a lot of yogurt, it is best to keep the bread refrigerated. Have it toasted when ready to eat.
