Make-Ahead

Yes, yes, yes 🙂 As mentioned above, you can make this as make-ahead. Simply assembe everything in a pan and cover it with plastic wrap. Keeping this overnight will give the croissant time to soak in the delicious creamy custard and berries compote. I suggest just enough custard to coat the croissant. Unlike other bread, croissant is more fragile and light and soaking too much will make the texture soggy.

Bake Blueberry Custard French Toast

Ingredients:

  • 1 Large Croissant
  • 1 Egg
  • 2 tablespoon Milk
  • 1 Tablespoon Brown Sugar
  • 1/4 teaspoon pure Vanilla Extract
  • pinch Salt
  • 1/3 cup Stewed Blueberry to Mix Berries (Divided: 1/4 cup for baking and rest for toppings)
  • 2 tablespoon Vanilla Custard Pastry Cream (optional)

Instructions:

  1. Make Ahead: Stewed Berries. Check the link post for the full recipe. You can use Blueberry, Strawberry or Mixed Berries. The steps are the same.
  2. Make Ahead: Vanilla Custard Pastry Cream. Check the link post for the full recipe.
  3. Cut the croissant into 1/2-inch thick.
  4. Arrange in a 5-inch pan.
  5. Insert stewed berries in between the sliced of croissant.
  6. Make the custard by mixing the egg, milk, brown sugar and pure vanilla extract.
  7. Pour over the croissant. At this stage, you can keep it in the refrigerator overnight for baking the flowing day. Cover with plastic wrap.
  8. Bake at pre-heated oven 350F for about 15 – 20 minutes or until the croissant is lightly toasted.
  9. Serve: If using Vanilla Custard Pastry Cream, spread custard on the plate and lay the bake French toast on top. Drizzle custard on top and spoon more Blueberry compote. To thin out the custard for pouring on top, add milk or cream until you get your desired consistency. This extra step is optional but highly recommended.
