Ok, 6 is not a bad list at all but I’m looking forward to growing that list. Although all of these treats uses banana, they are all great in different way. So I suggest if you have overripe banana, don’t throw them and turn them in something delicious like these treats. People won’t even know that all these are from the dark spots ugly leftover banana.
Now, let’s talk about this new addition to the list, Banana Oats Bar. I say “Easy” Banana Oats Bar because it definitely was very easy for me to make. One bowl, less cleanup and ready in about 45 minutes. So fast! When I first saw this in Pinterest, I was already in bed getting ready to sleep. But then I knew that I wouldn’t be able to go to sleep and I will keep thinking about it If I don’t make it that time. So I head to my kitchen, grab the ingredients which are pretty basic, and very customizable if I may say. There were 2 more overripe bananas left when I made the Banana Chiffon Cake, so they went into this ooey gooey Banana Oats Bar. Before I knew it, it’s in the oven baking and then on my counter cooling. Now, that made me sleep better knowing that when I wake up in the morning this Banana Oats Bar will be happily waiting for me to be devoured. Morning cannot get any better than that!
What are you getting from this Banana Oats Bar?
Deliciousness! Is that even a word? Oh well, in my world it is and that is how I describe this Oats Bar. Plenty of texture from oats, packed with banana flavor, loaded with chocolate chips (as always) and top with melted chocolate ganache (again, as always). It is soft, and not too sweet for my taste. I used brown sugar to give it a slight caramel taste and a little bit of gooey chewy texture.
This is how easy it is!
You start by getting your clean bowl ready, just one bowl. Then peel off the banana, put it in the bowl and mash it. You can use fork to mash the banana, it should be pretty easy because its overripe and soft. Then you add the egg, mix and mix and then you add all the remaining ingredients. Mix, mix, mix. That’s it! Transfer in a pan lined with parchment paper and this baby is ready to go into the oven. Bake, cool, enjoy! Let’s get started!
Ingredients:
- 2 large mashed bananas
- 1 egg
- 1 cup rolled oats
- 1/4 cup peanut butter
- 3 tbsp brown sugar
- 1/4 tsp baking soda
- 1/2 tsp vanilla
- 1 tbsp flavorless oil
- 1/3 cup chocolate chips
- Chocolate Ganache (Optional) – for drizzling on top
Instructions:
- Mash bananas in a bowl. Add egg and mix until combined.
- Add oats, peanut butter, sugar, baking soda, vanilla extract, oil, chocolate chips. Mix well until just combined.
- Pour into a 9×9 (or 8×8) baking sheet/pan lined with parchment paper.
- Bake at 375 for 20 minutes or until the top is set and the edge started to pull away from the side of the pan.
- Let cool completely before cutting. Chill in the refrigerator at least 30 minutes (overnight preferred).
Makes 9 pieces
