Happy Meat Free Monday guys! I am so excited for our Meat Free Dish today, it cannot get any easier that this Vegetarian Gyros. Instead of the traditional Greek Gyros that has grilled meat (usually chicken or beef) wrapped in a flatbread, we are making ours vegetarian style. Don’t run away from you, hold still and just give me a chance to tell you what’s inside this Gryos. You are going to love it, in fact I myself was madly in love with this wrap. It’s insanely delicious and flavorful for something that is vegetarian, so you asked how come? Let me tell you.
What Made this Vegetarian Gyros Special?
You’ve probably seen it before here in my website, it’s my Cheesy Zucchini Tots! Yes, those nice vegetarian tots stuffed with mozzarella cheese with crispy panko bread crumbs are the secret of this vegetarian wrap. You will feel like you are eating a meatballs with this wrap when in fact everything is vegetables, it’s insanely good. The combination of the Cheesy Zucchini Tots with all the fresh veggies and nice Tatziki dressing is to die for. I know, I sound over exaggerating it but I cannot simply find the words to express how excited I am with this dish (if I can call it a dish). I wish you could try them with me, but since that’s not possible, I guess you have to make them yourself and tell me if I am wrong in my judgement.
Choice of Veggies
This is not a strict recipe, you can mix and match vegetables that you like and it will still taste great but please, please give the Cheesy Zucchini Tots a chance and give it a try. I used staples vegetables in my fridge which are basically lettuce, tomato and cucumber plus the avocado which is not really staples but I always go out of my way to buy avocado whenever I am making a wrap, panini, grilled cheese and salad. I feel that it seals the deal and it completes the dish. I am thinking grilled eggplant, bell peppers and some chickpeas will be great with this wrap as well. The important thing is use the vegetables that you like and enjoy to eat. For me, that is a key component in enjoying meat free dish even if it is only once a week.
Alternative to Flat Bread
Pita bread, pita pocket and Naan Bread will work too. I would suggest that you used something that is thicker and that has more of a bread feel to it rather than Burito style wrap which uses tortilla. I used a Homemade Garlic Naan Bread for this one, and from time to time I also use store-bought flat bread or panini bread. This dish is very budget friendly and quite filling too.
Ingredients:
- 2 round flatbread or Homemade Naan Bread
- 1 small avocado – pit removed
- 1 small tomato
- 1 small cucumber
- 4 – 5 pieces of lettuce leaves
- 6 pieces Cheesy Zucchini Tots
- 1/4 cup Tatziki sauce or any yogurt based recipe
Instructions:
- Make the Cheesy Zucchini Tots. This can be made ahead of time and stored in the fridge until ready to use.
- Toast or microwave the bread. Arrange vegetables on top and drizzle with Tatziki dressing.
