Something cold to keep us cool and refresh. With the warm weather we are having recently, all I can think of are cold drinks and frozen beverages. Smoothies for breakfast and post work out drink, ice cream form deserts, cold brew tea and iced tea, these are just some ways I handle the heat. I had been constantly looking for something different to try to make it fun, and this Frozen Blueberry & White Chocolate Yogurt Bar is one of them. I made a variation of this one before but without the white chocolate. For this one, I added some white chocolate chips in the mixture and on the top. I was amazed how this little change made a huge difference in how it tasted. The extra sweetness from the white chocolate and the small amount of honey drizzled on top balances the tangy creamy taste of yogurt. It is really worth adding these 2 ingredients.

Blogging my seem like an easy thing to do but in reality it takes a LOT of time to finish a single post. In my Take a Peek at the Behind The Scenes of Food Blogging, I shared with you my process when creating a post. Although it takes a lot of time, it gives me a lot of joy doing thing. Blogging keeps me sane 🙂 and help me balance my life between work and personal time. I love sharing recipes with you as well as my travel escapades. I had been busier lately with work and I started making my meals on the fly, you know whatever I have on hand. Something that I do not have to plan just like when creating a posts for the blog. I thought I would create a short post about this, not as elaborate as my full post but enough to give you idea on how you can make it at home. This will be easy and quick recipes that you can make in less than 30 minutes max or even 5 minutes less. We all need a short break from the kitchen, but that doesn’t mean we have to stop making delicious meals to nourish us.
Today’s Quick & Easy Recipe
We are making frozen snack bite items today. Fruity, creamy, sweet and tangy Frozen Blueberry and White Chocolate Yogurt Bar. This frozen dessert is so easy to make, the difficult part is waiting for it to freeze. It is worth the wait, trust me.
You will need Berry, I used Blueberries but Strawberry, Raspberry or Cherry will work as well. You can even use a mix of all or some of them.
For the yogurt, I always used plain Greek yogurt when I make this. Greek yogurt are thicker, creamier and have less water content. This makes the frozen bars less icy and more on the smooth side. I also like using plain Greek yogurt so that it has neutral flavor. This way, it works with any fruits or toppings that I choose to add.
For the white chocolate, I used a combination of chocolate chips and a bar chocolate that I chopped. You can add more than what I specify below, the more the merrier.
For the sweetener, stick with liquid sweetener. This dissolves easily, and helps produce a smoother frozen treat. I used honey, maple syrup will work too. I just find honey to have a more neutral flavor than maple syrup that is why I prefer honey. Do not skip the drizzling of honey on top, it makes a huge difference in taste. I’ve tried making one without honey on top and although it was good, it was not S good when you drizzle honey. The honey helps balance the tangy taste of yogurt, plus there’s really not much ingredients here to boost the taste, so honey it is.
Ingredients:
- 1/2 cup Yogurt
- 1 cup Blueberry
- 3 tablespoons Honey
- 1 tablespoons Desiccated Coconut
- 30g White Chocolate
Instructions:
- 1. In a bowl, mix yogurt and honey. Add the coconut, white chocolate and Blueberry.
- 2. Pour in a parchment lined 5 x 5 pan. Top with more white chocolate.
- 3. Freeze at least 4 hrs, overnight recommended.
- 4. Remove from the pan and cut into square.
- 5. Store in a ziplock container. Keep in the freezer and take out only what you eat.
Serves 2 – 4
