Let’s welcome Fall, shall we? It’s only been few days since Fall started and to be honest, I’m still getting the hang of it. I still wish it’s Summer, O still miss the hot sunny weather, I still miss gardening and outdoor activities. Yes, I miss Summer a lot, but it’s time to move on now.

What could be a better help to embraced Fall than with a nice warm soft Almond Apple Cake topped with caramelized apple and crunchy bits of sliced almonds.

Fall gets me in the mood to bake

I was on an experimental mood when I made this. It was a gloomy weekend, those kind of day when staying at home is a better option. One thing I love about Fall season is the cozy ambiance of the house. So fitting to be lazy, bundle up and watch Netflix 🙂 and of course to bake something … or anything at all.

I made this without a recipe on hand, and I put to use whatever I have. Sometimes baking without a recipe to follow is very liberating and exciting at the same time. From time to time, I have this kind of moment when I am too lazy to look for a recipe to follow.

For the recipe, the idea was to have a soft and moist apple cake that is not too sweet. If it turns out great, then I’ll make a recipe and post about it. It was great and so here we are, talking g about this simple and easy Almond Apple Cake recipe. Don’t get scared to experiment in the kitchen, it feels great to be able to produce something from scratch.

At first I wanted to make it vegan but then I changed my mind. Using almond flour to make a cake can result to a bit dense and crumble cake texture which will not be good. Using additional fat from egg and milk will give the cake a better structure and texture. So let’s save the vegan Apple Cake for later testing.

A cake that is not too sweet but still delicious

I intentionally did not use refined sugar for making the cake. I used maple syrup instead and only a small amount, 2 tablespoons. The plan is to get the sweetness from the apple toppings. I want an end product where the cake is not too sweet but still delicious in every bite.

All-purpose flour + Almond Flour

The base cake was made with a combination of all-purpose flour and almond flour. Using pure almond flour sometimes tend to make the cake too dense and crumbly. In the past when I used only pure almond flour, that’s what happened. I learned combining all-purpose flour and almond flour tends to give better texture, again from my past experiment baking with almond flour. The cake will work with just all-purpose flour if you do not have almond flour. I assume this will be the case for most readers. The rest of the ingredients are basic pretty basic. Egg, maple syrup (not so basic), plain Greek yogurt for extra moisture, salt, baking powder and cinnamon powder for a fall flavor. Feel free to use mix of fall spices if you wish.

Caramelize Apple + crunchy sliced almonds

What really gives delicious taste to this cake is the apple and sliced almond toppings. The base cake itself although soft and moist is not too sweet. So if you eat only the half of the cake, you can tell how not too sweet it is. The cake was topped with caramelize apple that was swirled on top. I added sliced Almonds for crunch, and to give a hint that you are eating an Almond Apple Cake. I used 3 tablespoons granulated sugar for the apple, you can do with just 2 tablespoons if you want it even less sweet. Just bear in mind that the base cake itself only uses 2 tablespoons of maple syrup. The sweetness of the cake will rely on the apple toppings more than the whole cake itself.

First bite of the cake l, I thought .. hmmm, it’s seems too sweet for my taste. Then I ate more and realize that the sweet part was just really the top which was what I ate on the first bite. I did my second bite, and third and fourth .. and then it was .. gone just like that. So I told myself, not bad for something I thought was sweet. You can decrease the sugar for the apple toppings to 2 tablespoons if you want a less sweet toppings, again just bear in mind the cake itself do not have much sweetener. You want to aim for a balance to not end up with a bland cake, you wouldn’t want that. A bland apple cake is a sure fail for Fall, don’t go on that route.

6-inch baking dish

Let’s talk about the baking dish I used. I used a Brie cheese ceramic pan and it comes with a cover. I got this years ago as a free item when I was hopping for a holiday gift. I would say it was a 6-inch in size so anything similar to that size will work. A regular cake pan, or even a muffin tin for individual serving size. If using a muffin tin, baking time will vary, say around 18 -23 minutes.

You can serve this as it, but I think a dusting of icing sugar on top made it look more elegant and inviting. Serve it with fresh fruit on the side or even with vanilla ice cream, and that will surely be a “Yes please” apple desert that you and your friends will love.

Almond Apple Cake

Ingredients:

Instructions:

  1. Pre-heat the oven to 350F.
  2. Make the caramelized apple toppings. Ina. pan, add the diced apple followed by the sugar. Cook until the sauce is reduce and the apple pieces are soft. Set aside.
  3. In a bowl, beat the egg, maple syrup and plain greek yogurt. Add all-purpose flour, almond flour, baking powder and salt. Mix to combine.
  4. Transfer in a 6-inch baking pan. Top with the caramelized apple and slightly mix in a swirl motion. Top with sliced almonds.
  5. Bake at 350F for 40 minutes or until toothpick inserted in the middle comes out clean.

Serves 3

Recipe Notes:

  • Almond flour can be substituted with all-purpose flour
  • For the apple, you can use golden crispy, granny smith, honey crisp
