[VIDEO] Small Batch Peaches & Cream Tiramisu for Two

How about a fruity version of Tiramisu? Ok, you might be thinking it is not Tiramisu without the coffee flavor and cocoa powder on top. I hear you and I agree too, but slight tweak won’t hurt. This is delicious and I promise you w I’ll not regret it.

Call it whatever you want, maybe Peach Cake? Peaches and Cream Cake? Whatever makes you happy because the name is just the beginning of your delicious journey. This Peaches and Cream Tiramisu is as good as classic Tiramisu but in a more creamy and fruity way. For those people who cannot tolerate coffee but still want to enjoy the idea of Tiramisu, try this one.

I made this couple of times already this year. First time I made this was this Summer, that is why you can see the Sunflower in one of the photos here. I thought why not make it for the Holiday season? This will be a great way to end the meal, who could resist this cake anyway? Not me!

Fruity Tiramisu

This version does not contain egg yolk, which makes the recipe even simpler. To be honest, I opted for no egg yolk because this is a no bake dessert. I still do not feel comfortable adding raw egg and not cooking it. Not saying it is bad, there are plenty of recipe who uses egg. If that works with you, you beat the egg yolk and sugar before adding the mascarpone cheese. I would say use 1 egg yolk only as this is a small batch.

About This Recipe

  • Ease in Making the Recipe: The process of this variation is almost the same as my Simple Tiramisu. The main difference is that this uses milk for soaking instead of coffee and slices of Peach are layered in between the cream and lady fingers layer.
  • Ingredients: All the ingredients you need to make the Peaches and Cream Tiramisu are easy to find. You can make this anytime of the year even if fresh Peaches are not in season. You can substitute Peach with Apricot, Apple, Pear or even stewed Berries.
  • Texture, Taste & Flavor: Soft and fluffy soaked lady fingers with a nice layers of creamy mascarpone cheese.
  • Make-Ahead: Yes you can make this ahead of time. I personally like making this a day ahead because I like the lady fingers to soak on the espresso and the whipped cheese. However, if you are in a hurry, you can also serve this the same day you make it. If this is what you want to do, add a bit more whip cream to the mixture so that you get a more fluid consistency for pouring on top of the lady finger layers before serving.

Ingredients for Peaches and Cream Tiramisu

  • Whipping Cream – The whip cream will help make the cream filling lighter, smoother and more fluid. Do not substitute with anything else.
  • Mascarpone Cheese – For traditional Tiramisu, go for mascarpone cheese. Some recipe uses cream cheese but it will not taste the same. It will be more like a no bake cheese cake that Tiramisu.
  • Icing Sugar – To sweeten the cream filling and for dusting the top. Icing sugar or confectioners sugar has a finer texture that dissolves better when whip. This will produce a smoother cream filling without any grainy texture.
  • Milk
  • Canned/Bottled Peach – Canned of bottled Peach are the quick and easy way to go and the best option too. Canned peaches are soft and sweet which matches the soft texture of the cake. If using fresh, I would suggest cooking it up in sugar and water first to soften it.

Overview on How to Make Peaches and Cream Tiramisu

  • Make the Cream Filling
  • Soak the lady Fingers in milk
  • Arrange the soak lady fingers and cream in a glass
  • Chill
  • Dust with icing sugar when serving

Ingredients:

  • 125ml Whipping Cream
  • 110 grams Mascarpone Cheese
  • 25 grams Icing Sugar
  • 1/2 teaspoon Vanilla Extract (optional)
  • 2 Large Peach (canned/bottled or fresh)
  • Icing Sugar/Confectioner Sugar
  • 3/4 cup Milk or Coffee
  • 3-4 pieces Lady Fingers

Instructions:

  1. Make the Cream Filling: Pour the cold whipping cream in the bowl. Sift the icing sugar. Add pure vanilla extract. Whisk until soft peaks. Add the mascarpone cheese and mix until just combined.
  2. Soak the lady Fingers in the milk. Quickly soak the lady fingers in milk. Do NOT soak for too long as the lady fingers will break. Simply, dip while making sure both sides are wet then lift immediately.
  3. Arrange the soak lady fingers and cream in a glass – Arrange the soak lady fingers in layers alternating with cream filling and peach and ending with cream on top.
    • If you are using a large container, you can have more layers. I did only 2 layers as I was using a small serving glass.
  4. Chill: Cover with clingwrap and chill at least 1 hour or leave overnight. Do NOT dust with icing sugar before chilling as the icing sugar could absorb the moisture from the refrigerator and it will get wet.
  5. Serve: Dust icing sugar on top before serving.

Recipe Notes:

  1. Use mascarpone cheese to get the traditional Tiramisu taste
  2. Do NOT soak the lady fingers for long. Dip quickly then lift. Lady fingers are airy cookie that absorb liquid quickly. Soaking for a long time will break the Tiramisu.
  3. Do NOT dust with icing sugar before chilling as the icing sugar could absorb the moisture from the refrigerator and it will get wet and watery.
