[VIDEO] Meal Prep Soup: Chicken Vermicelli in Mason Jar

If you are looking for an easy meal prep soup that can last long in your fridge, or even carry with you on the go, then you are in the right place. What I have for you today is a meal prep souping a jar. It’s a Chicken Vermicelli Soup in Mason Jar.

Blogging my seem like an easy thing to do but in reality it takes a LOT of time to finish a single post. In my Take a Peek at the Behind The Scenes of Food Blogging, I shared with you my process when creating a post. Although it takes a lot of time, it gives me a lot of joy doing thing. Blogging keeps me sane 🙂 and help me balance my life between work and personal time. I love sharing recipes with you as well as my travel escapades. I had been busier lately with work and I started making my meals on the fly, you know whatever I have on hand. Something that I do not have to plan just like when creating a posts for the blog. I thought I would create a short post about this, not as elaborate as my full post but enough to give you idea on how you can make it at home. This will be easy and quick recipes that you can make in less than 30 minutes max or even 5 minutes less. We all need a short break from the kitchen, but that doesn’t mean we have to stop making delicious meals to nourish us.

Today’s Quick & Easy Recipe

This meal prep soup is a bit different from the usual make-ahead soup that we make. Usually, we make a large batch of soup for the week, freeze them and serve them.

This however is different. Although you can make as many single serving jar, you don’t need to cook the soup in large batch. Melt me walk you through how you can make this.

Soup in a jar is literally preparing ahead a soup and storing it in a jar. The dry ingredients and spices are stored in a jar and when ready to eat, a hot broth is poured into the jar.

Let’s Talk About the Jar

For the jar, I like to use medium size mason jar that is perfect serving for one meal. If you want more, you can use the large mason jar with wide mouth. That is actually more convenient is you want to eat the soup straight from the jar as the big mason jar has a wide mouth or opening. If you don’t have a mason jar, you can use any container that can handle very hot liquid.

Mix and Match the Vegetables

For the vegetables, you can mix and match what you like. For this soup, I used thinly sliced carrots, red bell peppers, cilantro and spinach. You can also use shredded cabbage, broccoli, mushroom or anything that doesn’t require much cooking.

Store-bought ot Homemade Brought

For the broth, I used homemade vegetable broth and added chicken soup powder. You can also use chicken bouillon. You can also use vegetable or beef bouillon cubes if you want to make a vegetarian or beef soup variations.

Vermecelli Noodles is the best option

For the noodles, use vermicelli glass noodles or anything that cooks easily by juts adding hot water. Because this soup will be served by just adding hot water, you need a noodles that cooks easily. Pasta noodles or ramen noodles will not work as they require time to cook. If you want to use noodles like this, then you have to cook it first then add it in the jar.

Use Protein of your Choice

For the protein, I used shredded rotisserie chicken to speed up the process. For vegetarian option, you can use cook tofu or soft tofu that doesn’t require much cooking. You can also use thinly sliced beef and add it when you are serving it. Do not put raw beef in the jar as it could go bad. Another option is to add dumplings when you are ready to eat it.

Garnish Before Serving

For the garnishing, Cilantro completes this dish. If you are not into Cilantro, chop parsley will work too. I also like to add some chili oil for a kick of heat. If you don’t have chili oil, slice jalapeno will work too.

Let’s Put All Together

To assemble, simply add all the vegetables and seasoning in the jar. If using cooked chicken or tofu, you can add it too, then add the uncooked vermicelli noodles last. if you are using uncooked thinly sliced beef, add it only when you are ready to eat the soup.

Time to Serve

When it’s time to eat the soup, simply pour boiling hot broth in the jar and cover. Leave for 15 minutes or until the noodle is cook.

To serve, you can eat it straight from the jar or put it in a bowl, the choice is yours. Enjoy!

Ingredients:

  • 50g Chicken – shredded and cooked
  • 1 1/2 cup Chicken Broth
  • 1 teaspoon Chicken Soup Powder or Bouillon Cubes
  • 1/8 teaspoon table Salt
  • 1/8 teaspoon Black Pepper
  • 1/8 teaspoon Red Chili Flakes
  • 1/4 teaspoon Turmeric Powder
  • 1/4 teaspoon Italian Seasoning
  • Cilantro
  • Spinach
  • 50g Assorted Veggie (i.e thinly sliced carrots, bell pepper, broccoli, cabbage etc.)
  • 50g Vermicelli Noodles

Instructions:

Add all the ingredients in the mason jar except the broth. Cover the jar with the lid and store in the refrigerator. When ready to eat, pour hot broth in the mason jar. Let sit for 15 minutes until the noodles is soft to your liking. Serve in the mason jar or transfer in a bowl.
