Cauliflower Fried Rice

Cauliflower rice is proof that simple ingredients can lead to extraordinary dishes. Ingredients:

  • 1 tablespoon Olive Oil
  • 1 cup White onion, finely chopped
  • 2 cloves Garlic, minced
  • 1/4 cup diced Zucchini – optional
  • 1/4 cup diced Carrots
  • 1/4 cup Peas (frozen or fresh)
  • 1/4 cup Bell Pepper, finely chopped
  • 2 cups cooked Cauliflower Rice
  • 1 Egg, beaten
  • Salt, Black Pepper, Paprika, Oregano
  • 1 small fresh Jalapeno Pepper – thinly sliced
  • 1/2 cup Shrimp , Chicken Breast or Meat Balls

Instructions:

  1. Heat a large pan over medium-high heat. Add olive oil and garlic. Saute until fragrant. Add the onion. Cook for 3-4 minutes until the onion starts to soften. Add the shrimp/chicken/meatballs, and all seasonings and spices. Mix until cook through.
  2. Add carrots, green peas, and bell peppers to the pan. Cook for 2-3 minutes, and then stir in the cauliflower rice.
  3. Clear a circle in the center of the pan and pour in the beaten eggs. Stir to scramble the eggs and then combine with the other ingredients. Cook for another 1-2 minutes. Do not over cooked to avoid having the cauliflower mushy. Taste and adjust seasoning as desired.
