Hello, dessert enthusiasts and mango lovers! It is Mango season once agan and today, we’re embracing the tropical flavors of mango with a recipe that’s as nutritious as it is delicious—Mango Baked Oats. This delightful dish can be enjoyed warm or cold and is perfect for breakfast or dessert. With its simple ingredients and quick preparation, you’ll find yourself making it again and again.
Imagine a creamy, smooth blend of milk, oats, and ripe mango, baked to perfection with chunks of fresh diced mango mixed in. Before baking, a swirl of plain Greek yogurt is added on top, creating a beautiful and tangy contrast. When served cold, the real magic happens with a scoop of vanilla ice cream, turning this baked oats into an elegant dessert. To finish it off, a luscious blend of ice cream and fresh mango puree is poured on top, adding a stunning and flavorful finish.

Once of the reasons why I love Summer is the abundance of fresh fruits, Mango to be specific. I love Mango so regardless if I eat it on its own or used it for baking. If there is one fruit that I do not mind buying a lot, this is the one. This recipe is very easy and can be served warm or cold, but cold is alwasy my preference. You know why? Because cold means I can add scoop of ice cream on top which makes this even more delicious.

I’ve used a combination of whole and pureed oats for better texture but if you liek it all the way smooth, then feel free to add all the oats in the blender. For the Mango, I highly recommend a combination of pureed and chunks. This dessert is loaded with Mango inside and out, promise!

Whether you’re enjoying it warm or cold, Mango Baked Oats is sure to impress and satisfy.
Ingredients:
- 1/2 cup Milk
- 1/2 cup rolled Oats (Divided: 1/4 cup blended, 1/4 cup whole)
- 1/2 teaspoon Pure Vanilla Extract
- pinch of Salt
- 1 1/2 Large Fresh Mango
- 3 tablespoon granulated Sugar
- 1/4 cup plain Greek Yogurt
- Ice Cream for serving
Instructions:
- Add milk, 1/4 cup oats, sweetener, vanilla extract, pich of salt and 1/2 of Mango in a blender. Blend until smooth.
- Pour in a baking dish. Add remaining 1/4 cup rolled oats and mix.
- Add diced fresh Mango and mix.
- Doll up greek yogurt on top. Use any pointed item to swirl the greek. I used chopstick to do this. Add more diced fresh Mango.
- Bake at 350F for 25 – 30 minutes
- If serving with ice cream, let cool completely. Scoop ice cream on top.
- Optional: Puree Mango and vanilla ice cream (as much or less as you like). Pour on top of the ice cream.
