Let’s make something … mini today 🙂 I had been on a roll making small bacth recipes lately. I find that making small batch recipe gave me the opportunity to control the portion I eat and most of all to have variety of different treats

What we are making today is a Small Batch Mini Blueberry Muffins, they are mini and bitse size but they are big in flavor, softness and deliciousness!

Mini, Mini Bite Size Muffin

This recipes makes 8 mini bite size muffins OR 2 regualr size muffins. Either way you go, it will be a portion size that is just for you, or you can share if you want to. I like this portion size because it satisfy my cravings without having to worry of leftover. It is gone in a day or two and after that, all is history and ready to move n to next sweet or savory treats.

Make it a Regular Size Muffin, Yes Why Not!

If you do not have mini muffin tin, which is not common for most people to won, you can bake this in a regular muffin tin. It will make a good 2 regualr size muffins. If you have mini muffin tin, try using it. I actually find it easier and more fun to eat, bite size and a good size for graba and go snack. No need to peel a muffin liner, simply grab and eat it whole or if you want to be modest, 2 bites it is.

What makes This Muffin Soft & Moist

I’ve added plain greek yogurt and used oil for mositure. You can substitute melted butter for oil. Since this is a small batch, I doubt this will last long in the refrigerator. You may even end up eating all of this in a day so no worries of it getting hard when refrigerated. I will not disagree that butter taste better than oil, 100% yes! So why did I use oil? Well,i run out of butter and I do like the way the muffin is softer when I use oil. I leave that choice to you but either of the two will work.

Fresh Orange Zest & Juice for a Citrus Flavor

I used freshly squeezed orange juice and used the zest to flavor the muffin. You can also use lemon or maybe lime for a stronger citrus flavor. If you do not have these, use vanilla extract instead.

  • Ingredients: The usual culprits for muffin recipe. Egg, oil/butter, sugar, flour, baking powder, baking soda, salt, blueberry. There are also few non standard ingredients but ae still easy to find like plin greek yogurt and orange juice and zest. You can substitute lemon for orange or simply remove it.

  • Texture, Taste & Flavor: Soft and moist, subtle citrus flavor, sweet and tangy blueberry. This muffin has just the right sweetness, you can eat more or all before you realize it is gone.
  • Make-Ahead: Yes, yes, yes! But with recipe this easy (less than 45 minutes), I encourage you to make it the ame day. Nothing beats a freshly bake muffin.

Ingredients:

  • 3/4 cup All-Purpose Flour
  • 1/2 teaspoons Baking Powder 
  • 1/8 teaspoons Baking Soda 
  • 1/4 teaspoon Salt 
  • 1 Egg Yolk
  • 1/4 cup plain Greek Yogurt 
  • 2 tablespoons Orange Juice
  • 1 tablespoon Oil or melted Butter
  • 1/3 cup Blueberry 

Substitution:

  • Orange Juice/Zest – Substitute with Lemon or Lime Zest
  • Oil – substitute with melted Butter
  • Blueberry – Substitute with Raspberry, Strawberry or mix Berries

Instructions:

  1. Pre-heat ven to 350F. Spray the muffin tin with oil or greased with melted butter. You can also use mini muffin liner if you have one. No need to grease the pan of using muffin liner.
  2. In a bowl, mix the egg yolk, sugar, yogurt, oil and lemon zest. Add the flour, baking soda, baking powder and Salt. Mix until fully combined. Fold in the Blueberries.
  3. Scoop in the prepared muffin tin. Press more Blueberry on top and sprinkle granulated sugar on top.
    • Mini Muffin: Divide by 8 portions
    • Regular Muffin: Divide the batter by 2 portions
  4. Bake in the preheated oven
    • Mini Muffin: 15 – 18 minutes
    • Regualr Muffin: 23 – 25 minutes
