If you are looking for delicious, easy breakfast that will make you look forward to having breakfast, give overnight french toast a try, that is if you haven’t tried it yet. This variation is the Overnight Blueberry Cream Cheese French Toast. You are right, it does have Blueberry and cream cheese on it, I know the title gave it all away but wait till you try it. You will be surprised how delicious it taste, it is almost like have dessert for breakfast, why not?

I am a morning person, and although I often have savory breakfast, I do not mind giving myself a sweet treat every now and done. Who am I kidding, I’m confessing it is getting more often that usual. This Blueberry and Cream Cheese French Toast is my new favorite addition to my dessert for breakfast kind of thing.

This is delicious, it has just the right sweetness, with creamy taste from cream cheese and tangy fruity flavor of fresh and canned Blueberry. I am covering all the bases here and using both so we get the taste of fresh or frozen Blueberry and the sweet tangy taste from the canned Blueberry pie filling. You can definitely use homemade Blueberry Jam or Sauce, I just happen to have a lot of leftover of Blueberry pie filling so I am using it to top this french toast.

About This Recipe
- Ease in Making the Recipe:
- Overnight french toast is a lot easier to make than regualr french toast. You d not need wait and flip the bread. This version gives you the flexibility to do it ahead of time and just bake it the following day when you want to serve it. The cuatrd mixture is similar to regualr frnech toast, except in this version, we are adding cream cheese and blueberry in the cuatrd mixture.
- Ingredients:
- Very simple ingredients. A custard mixture which is basically eggs, milk, blueberry, cream cheese and sugar or any sweetener of choice. You can make your own blueberry compote or use canned blueberry pie filling to make the process even faster. Your chpice!
- Texture, Taste & Flavor: Creamy, tangy, delicious! The bread has combination of soft and crunchy texture. It has a nice creamy taste from teh custard and cream cheese and nice sweet tangy blueberry flavor.
- Make-Ahead: Yes, Yes, Yes! That is the idea of the overnight french toast. You mix all ingredients and leave it overnight in the fridge for baking the following day. How convenient is that? Overnight french toast are perfect easy lazy breakfast when you want to have few more hrs of sleep.Make it at night and pop it in the oven the following day while you get ready for work. This is a great weekday and weekend breakfast idea. So easy to make and so much variation option so you get something different every time you make it.

Classic French Toast vs. Overnight French Toast
What is the difference? The base ingredients for these 2 are basically the similar. The custard base is made with eggs, milk and sugar and flavoring like cinnamon or vanilla extract. The major difference lies on the process on how you prepare it.

Classic French Toast are cooked on a skillet or griddle pan, and you prepare it the same day or few hours before you want to serve it. You basically dip the sliced bread into the custard mixture and then you cook it on stove top skillet or griddle pan. Because you are using a stove top, you have to check it from time to time to monitor the browning, and of course you have to flip it to cook each side evenly. Classic French Toast have a nicely browned slightly crunchy sides and soft center texture. It is more like a softer bread toast. This is what I like the best about it, the crunchy soft texture of the bread.

Baked Overnight French Toast. It also uses the similar ingredients, but instead of dipping the entire sliced bread, you need to cut the sliced bread into small cubes, and you don’t dip it individually. Imagine the amount of work if you dip each of the cube, it will be a nightmare. So what you do is you pour the milk mixture over the cubed bread and you toss it until it is fully soaked. Then you transfer it to a baking dish layer it with some fruits and you cover it with another layer of cubed soaked bread.
Fruit filling or compote are great option to take it to a higher leve. It really makes the french toast stand out and elevated so I highly recommend you try it that way. Cover it with plastic wrap and leave it in the fridge overnight, the you go have a nice goodnight sleep. The following morning, it’s ready for baking. All the work is done ahead of time, and all you need to do the following day is to bake it. The texture of this is totally different from the Classic French Toast. Overnight French Toast has a cake like texture and it is thicker. I would say this version is more filling and heavy because the bread itself is dense because of the long hours of being soaked in milk mixture. So I guess it depends on how much time you have on hand, or your preference. Regardless which one you choose, I guarantee that you will not regret it.

What is Special About This Overnight French Toast
This variation uses both fresh/frozen Blueberry and canned Blueberry filling. Although you can skip the canned Blueberry filling and use more fresh Blueberry to top it, adding the the sauce as topping made a huge of difference. It made the french toast even more moist and packed with delicious taste inside and out. Imagine all these combined with cream cheese. Now that my friend is a breakfast worth waking up to.
Homemade Blueberry Jam, Always Better Than Store-Bought
You can use a blueberry jam and even make it at home. If you have time to do that, I would highy recommending that rather than using the canned blueberry filling.

I made a Strawberry version of this few years ago. In that version, I used homemade Strawberry jam to fill the center. It was delicious as expected. I wanted to make this one a bit different. I love using whole fresh (if possible) Blueberry and that is what I did for this one. The Blueberry are mixed in with the custard while the topping uses Blueberry Sauce.

Ingredients for Overnight Blueberry Cream Cheese French Toast
- Bread – Use a day or days old bread. Because we are leaving the bread to soak overnight, using a fresh bread will make the french toast too soggy and wet. A drier bread will be able to absorb more liquid. I use white slice bread and retained the edges. You can remove the crusty edges, but I really think that will be such a waste. The crusty edge will soften while it soak overnight so there is no reason to waste any of it.
- Custard Mixture: You will need the usual ingredients for custard which are milk, egg and sugar. I used brown sugar, you can also use granulated sugar or any sweetener of your choice. Please note that the amount will vary if you use a liquid sweetener. If you are unsure how much liquid sweetener to use, add the eggs last so that you can taste and adjust the mixture before adding the egg. Do NOT taste it once the egg is added.
- Fruit: I am using Blueberry for this one. You can use other types of Berries, Peach, Apple or any fruits that make sense to add in the custard. Be creative, this is a very flexible recipe.
- Sauce/Topping: Because I used Blueberry to mix in with the custard, I also used Blueberry Sauce for the topping. I used canned Blueberry filling because i have a lot leftover. You can definitely make your own Blueberry Sauce, no need to buy and open an entire can of Blueberry Sauce just for this recipe. You only need 1/4 cup.
- Cream Cheese – You can use spreadable cream cheese in a tub or the one in the box. If using the one in the box, thaw it and take it at least 30 minutes before using it. If you forgot to take it out, no big deal. Cut it into cubes, it will melt once it bakes.
- Flavoring: I opted for Cinnamon Powder, you can also use pure Vanilla Extract.

Success Tips in Making Overnight Blueberry Cream Cheese French Toast
- It is best to use a few days old bread for this recipe especially if you want to leave it overnight in the fridge. The texture of the bread should be a little bit hard and dry already. A stale bread will not get too soft when submerged in the egg and milk mixture.
- It you want to make a larger batch, make sure you have enough liquid to soak the bread, but not too much to the point that you cannot see the bread anymore.
- Depending on the age, type and texture of the bread, you may need more or less milk. Adjust as needed. You want the bread to be fully coated with liquid mixture and a little more liquid left to submerge half of the bread.

Ingredients:
- 3 pieces sandwich or brioche Bread cut into small cubes (White, Whole Wheat or any Sweet Breads that is few days old) – dark sides remove
- 2 Eggs
- 1 1/2 cup full fat Milk
- 1/4 cup + 3 tablespoon Brown Sugar
- 1/2 cup fresh or Frozen Blueberry
- 1/4 cup Blueberry Filling or Jam or Compote
- 6 tablespoon softened Cream Cheese
- pinch of Cinnamon Powder
Note: Depending on the age, type and texture of the bread, you may need more or less milk. Adjust as needed. You want the bread to be fully coated with liquid mixture and a little more liquid left to submerge half of the bread.

Instructions:
- Cut bread into small cubes.
- In a large bowl, mix Eggs, milk, 3 tablespoon cream cheese, cinnamon and brown sugar. Add the Blueberry and cubed bread. Toss to combine.
- Pour the mixture in a 5.5×5.5 square pan. Cover with plastic wrap and leave overnight in the fridge, or at least 4 hrs if you are in a hurry to serve it.
- Before baking, spread Blueberry sauce or jam on top and scatter the remaining 3 tablespoon of cream cheese.
- Preheat oven to 350F/177C.
- Bake for 20-30 minutes or until top is golden brown and the center is set and no longer wet. Check the center, if still wet, pop in back to the oven for another 10 – 15 minutes.
- Serve and dust with icing sugar
Serves 4

Variations:
There are a lot of fruit add-in options if you are not into Blueberry. You can use other types of Berries, Peach, Mango, Pineapple or Apple. Pair the fruit of your choice with a fruit jam or compote on top. It’s that easy. Once you have the base custard mixture for soaking the bread, you can play around with different variations to make it different every time. If you are not into fruits, use custard or caramel Sauce instead to drizzle on top.
