Let’s talk about today’s recipe, Pecan Crumble Banana Muffin. This uses a very basic ingredients for the base muffin. The usual flour, sugar, egg, banana, oil, milk, and leavening agents. What makes this different is the addition of toasted Pecan. I found that Pecan is the best type nuts for this recipe because it has a softer texture compared to Almonds. You can also use Walnut that would work as well. Use raw nuts and toast it, but if you have any leftover candied pecans that are coated with sugar, that will work too, skip the toasting.
The pecan crumble topping is what elevated this muffin. The sweet, salty and crunchy topping gave texture to the muffin. Serve it warm with smother of butter or toast it which is my favorite way to enjoy banana muffin or banana bread lately. Ingredients:
- 1 medium size (about 100g) ripe Banana
- 1 Egg
- 3 tablespoon Flavorless Oil
- 2 tablespoons Milk
- 1/3 cup Brown Sugar
- 1 cup All-purpose Flour
- 1/4 teaspoon Baking Soda
- 1/3 teaspoon table Salt
- 1 tablespoons Baking Powder
- 1/2 teaspoon pure Vanilla Extract – optional
- 40g raw Pecans – toasted and chopped
Pecan Crumble Topping:
- 15g raw Pecans
- 1 tablespoon Brown Sugar
- 1 1/2 tablespoon All-Purpose Flour
- 1 tablespoon melted unsalted Butter
- Pinch table Salt
- 1/8 teaspoon Baking Powder
Instructions:
- Preheat the oven to 400F.
- Mix the wet and dry ingredients in separate bowl them combine them together and mix until the dry ingredients are incorporated. Add the toasted Pecan and mix.
- In a separate bowl, mix all the ingredients for the crumble toppings. Set aside.
- Divide portion in 6 and pour in the muffin pan lined with muffin liner.
- Sprinkle the crumble toppings on top
- Bake at 400F for 5 minutes then at 350F for 15 – 18 minutes. Toothpick inserted in the center should come out clean of batter.
- Leave in the pan for about 5 minutes then transfer in a cooling rack.
