Completely dairy (in case you care), guaranteed you will not miss the meat when eating this stew. It is as good as a meat stew and lighter too. Ready in less than 1 hour
Simply stew. I say simply because this truly is a simple recipe for a stew. This stew is ready in less than 1 hr, no long wait for simmering and tenderizing any meat because this is a vegetarian stew. I can guarantee you that even without a meat, this stew is flavorful and filling. It almost look like a beef stew, deceiving but it a good way.
I try to make plant based dish at least once a week, which means basically 2 serving portions for me. I am not vegan or vegetarian but I like to keep my meat consumption to a minimum if possible but I do enjoy them from time to time.

Inspired by a beef dish
This stew was inspired by the beef bourguignon. I like that dish and so I thought why not create a vegetarian version of that dish. Mushroom is a great meat replacement for meat and it certainly works for this one. Because we are not adding any meat for this stew, I added hearty vegetables to keep it filling and satisfying. Potato and carrots are staple for most stews, expect to see them here.

Add vegetables that you like
This stew is very flexible in terms of what vegetables you can add.Green peas is nice too and some leafy greens like spinach and Kale will be a great addition too. Be creative and enjoy.

Thick without using a cream
The stew relies on addition of all-purpose flour and small amount of tomato paste to thicken the sauce. Trust me, it is as good as when using dairy to thicken the sauce .

Be generous with spices
Seasonings and spices are your best friend for this stew, use them generously. The key to a flavorful plant based or vegetarian dish are spices and seasonings. Season, season, season.. then taste 🙂


Cozy Vegetarian Mushroom Stew: A Bowl of Pure Comfort
Ingredients
Method
- In a heated pan, add the oil and cook the potato until nicely browned.Remove from the pan.
- In the same pan, cook the mushroom for about 1 -2 minutes. Add the chopped onion and continue cooking until the onion has softened.
- Add 1 tablespoon all-purpose flour and mix to distribute. Add the broth, carrots, bell pepper, cooked potato, tomato paste, salt, red chili flakes, sugar, Italian seasoning and paprika. Simmer until the vegetables are cook to your liking and the sauce has reduced to a thick consistency.
- Serve with steamed rice or bread for dipping.
