I make this brownie when I want a brownie that is not on the heavy dense side. More like when I am feeling like a thick, soft almost cake like texture but not quite like a cake. A cross between brownie and cake in one delicious bite.

Although brownie can be kept for weeks in the refrigerator and months in the freezer, for me it still taste better fresh out of the oven, or even a day or two. This brownie is a perfect portion for me, actually more than enough. 4 decent size squares, this can even be shared between 4 people, or 2 if you want an extra piece for each one of you.

Nothing too Sweet

One thing I like about this brownie is that it is not too sweet, just right to satisfy my craving but not too overly sweet and overwhelming. I intentionally reduced the sugar to 1/3 cup from 1/2 cup because I added marshmallow on top. The extra sweetness comes from the toasted marshmallow which is quite nice. It is nice to enjoy brownie without too much sugar overload.

These small batch rocky road brownies bake into four rich, fudgy squares loaded with chocolate, marshmallows, and crunchy nuts. They come together quickly and deliver that classic rocky road texture in a cozy, scaled‑down batch—perfect when you want a little indulgence without a full pan.

Ingredients
  

  • 4 tablespoons unsalted Butter melted
  • 1/3 cup granulated Sugar
  • 1 large Egg
  • 1/2 teaspoon Vanilla Extract
  • 1/4 cup All Purpose Flour
  • 3 tablespoons unsweetened Cocoa Powder
  • 1/8 teaspoon Baking Powder
  • 1/8 teaspoon Salt
  • 40 grams chopped Peanuts
  • 3 tablespoon Mini Chocolate Chips
  • 20 grams Mini Marshmallows

  • Oven

Method
 

  1. Preheat oven to 350 degrees F (177 degrees C). Lightly butter a 4×6 or a 5×5-inch baking dish.
  2. Stir together the melted butter and sugar in a medium-sized mixing bowl. Let completely cool.
  3. Stir in the vanilla extract and egg.
  4. In a separate small bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  5. Pour the dry ingredients into the wet ingredients and stir to combine.
  6. Fold in half of the nuts the nuts.
  7. Pour the brownie batter into the baking dish and top with the remaining chopped peanuts.Add more or less as you like.
  8. Bake for 23 minutes. Remove from the oven. Sprinkle mini chocolate chips and mini marshmallow on top.
  9. Return to the oven on a broiler setting. Broil for 3 minutes of until the marshmallow is lightly toasted. Do NOT leave un-attended when broiling as this could get burn easily.
  10. Remove from the oven and let cool for 10 minutes. Slice and enjoy.
