We are making some bread today, not just any bread.. a delicious and addictive kind of bread. If you love cheese and jalapeño as much as I do, you will love this recipe. I rarely make big batch of anything, but I do have few recipes that I love making a big batch serving and this is one of them. This bread has been a favourite of anyone who had tried it, so this is not just me being obsessed with anything cheese and jalapeño.
There’s something about the smell of freshly baked bread that makes a house feel like a home—but when that bread is loaded with three kinds of cheese and a spicy jalapeño kick? Now we’re talking next-level comfort food. This big-batch 3-Cheese and Jalapeño Bread recipe makes 15 soft, cheesy, golden rolls that are perfect for sharing, gifting, or hoarding (no judgment here). Whether you’re prepping for a potluck, stocking the freezer, or just feeding a hungry crew, this recipe brings the heat and the heart.

Homemade Bread is a Labor of Love
No arguing about it. Homemade bread is a labour of love, especially the yeast bread but this is one of those things that is worth waiting for. Yes, it is easier to just go to the bakery and buy bread, but making your own bread at home not only gives you the satisfaction that you’ve made it, plus you know what exactly is going it to your bread. You can customize it to your liking, add as much or less or what you like and do not like. So if you have time to spare and looking for a rewarding project to do, start your journey in making homemade bread. it is worth, promise!

Make it Savory
I love sweet rolls and bread, but savoury bread always is in the top of my list when I have to make a choice. I’ve made quite a lot of bread, from simple to complex, sweet and savoury (or both) but the combination of jalapeno and cheese is so far my 1 best go to for making savoury bread. Make it into a roll or bread loaf, it doesn’t matter much to me as long as jalapeno and cheese are present in my bread. I used a combination of picked and fresh jalapeño peppers, and a bit more than usual because I love spicy food and I have a high tolerance to them. If you do not like spicy stuff, just decrease the jalapeño peppers but do not totally remove it.

Easy, No Fuss Way to Shape It
You can go fancy and do a cinnamon roll style, they are attractive for sure, or do a Babka loaf style, or a simple dinner rolls style. You can shape it the way that you want to and I have done it in the past. I’ve used this same recipe to make different variations and shapes of bread, and they always end up amazing. For this one, I opted for a simple rustic look. No rolling out the dough, no twisting or braiding. I simply divide the dough into 15 portions, did not bother to smoothen it into a dinner roll style. Just rustic, uneven but beautiful. It is easy, simple and no fuzz. Have a look a the short video to see how I did it.

3 Types of Cheese
Why settle for one cheese when you can have three? This recipe combines:
- Marble Cheddar for that classic sharp, melty richness
- Cream Cheese for a creamy, tangy layer that keeps the crumb moist
- Parmesan for a salty, nutty finish that crisps up beautifully on top
I’ve used a combination of 3 types of cheese for this bread. A marble cheddar for the nice pop of yellow colour and strong cheese flavour, cream cheese for the creamy taste in every bite and grated parmesan cheese for a nice crunch on top. These cheese all worked well together and contributed something to the taste of the bread, but the cream cheese is the one that really takes this to the addictive level. The addition of cream cheese is just a surprised. When you bite on it, all of a sudden you get this creamy soft cheese that you did not expect to be there. I would not make this any other way, cream cheese is a MUST to this bread so do not skip it. In fact, I would encourage you to add more. I used 4 ounces of cream cheese and divided it for 15 pieces of bread. Next time, I will definitely use the entire box (8 ounces) of cream cheese. It was so good!
Each cheese brings its own personality to the party, and together they create a gooey, savory explosion in every bite.

Jalapeno: The Perfect Kick
Don’t worry—this isn’t a five-alarm fire situation. The jalapeños add just enough heat to wake up your taste buds without overpowering the cheese. You can use fresh jalapeños for a bold bite or opt for pickled slices for a tangy twist. Want it milder? Remove the seeds and ribs. Want it hotter? Leave them in and maybe even toss in an extra pepper or two. You’re the boss of the spice level here.

The Dough: Soft, Fluffy & Full Proof
This dough is a dream to work with—soft, slightly enriched, and sturdy enough to hold all that cheesy goodness and jalapeno. After a good rise, it rolls out beautifully and bakes up into golden, pillowy rolls with a tender crumb. The cream cheese melts into the dough, keeping it moist and flavorful, while the cheddar and Parmesan create those irresistible cheesy pockets and crispy tops.

Perfect for Sharing or Gifting
With 15 generous pieces, this recipe is made for moments when you want to spread a little joy. Wrap a few in parchment and twine for a thoughtful homemade gift, or serve them warm at your next gathering. They’re a hit at potlucks, game nights, or alongside a bowl of chili or tomato soup. And if you’re lucky enough to have leftovers, they freeze beautifully—just reheat and enjoy.

A Make-ahead/Overnight Dough
This bread dough can be made a day ahead. This will make the entire process easier in terms of time allocation. Make the dough a day ahead and store it in a greased bowl covered with a tight lid. Depending on how you intend to use the bread, you can keep it whole or divide it to portions you like. The cold temperature of the refrigerator will slow down the yeast from activating and prooffing the bread. Once you are ready to use, pre-heat the oven to 110F then turn it off as soon as it reaches the 110F. Leave the dough inside until warm enough to work with. Shape it, portion it (if haven’t done it yet), add they mix-in cheese and jalapeno then shape it again and leave for another 60 minutes to rise.
Make it Your Own
This recipe is endlessly adaptable. Swap in mozzarella or gouda for a different cheese vibe. Add chopped green onions or roasted garlic for extra depth. You can even shape the dough into mini loaves, pull-apart rolls, or a braided centerpiece. It’s your bread, your rules.

Ingredients:
- 3/4 cups + 2 tablespoons Full Fat Milk
- 2 tablespoons Flavorles Oil
- 2 Eggs – room temperature
- 2 teaspoons Active Dry Yeast
- 50g granulated Sugar
- 3/4 teaspoon Salt
- 520g Bread Flour
Mix-In:
- 1/2 teaspoon Paprika Powder or Cayenne Powder
- 1/2 teaspoon Italian Seasoning
- 1/2 teaspoon Parsley
- 1/2 teaspoon Basil
- 1/2 teaspoon Oregano
- 1/2 teaspoon Onion Flakes
- 1/2 teaspoon Garlic Powder
- 1/2 teaspoon Salt
- 1/4 cup diced Jalapeño Peppers (fresh or pickled)
- 150g White Cheddar Cheese – grated
- 150g Marble Cheddar Cheese – grated
- 6 Ounces Cream Cheese – cut into cubes
- 200g Cold Cuts (I used Turkey) – optional
Instructions:
- Activate the Yeast: Microwave the milk for 20- 25 seconds until lukewarm but NOT hot, aim for 110F. If you have a baking thermometer, use it as it is the best way to be sure of the temperature. Hot milk will kill the yeast and the bread will not rise properly. Transfer milk in bowl of stand mixer and add 1/2 tsp of the granulated sugar and stir. Add the yeast and let rest for 10 minutes until mixture is foamy. If the mixture did not become foamy, either the yeast is old or the milk is too hot. Do NOT proceed until corrected, otherwise you will end up with a tough dense bread
- Add Wet Ingredients: Add remaining sugar (3 tbsp) and egg to the yeast mixture.
- Add Dry Ingredients: Followed by the flour and salt.
- Knead the Dough (Speed 2) Using the paddle attachment, mix for about 30 seconds just to bring the mixture together. Replace with the dough/hook attachment and knead for 15 minutes (KitchenAid Speed 2). If the dough is too dry, add 1/2 teaspoon of milk until it reach a smooth, soft and elastic texture. The side of the bowl should be clean, while the dough is slightly sticking to the bottom of the bowl.
- To Check: The dough should be smooth, soft, elastic and slightly sticking to the bottom of the bowl
- Rest 60 minutes: Remove the dough and form into a ball. Transfer into a greased bowl and cover bowl with plastic wrap and rest 60 minutes before shaping.


- Shape and Arrange:
- Lightly push the dough down with the heel of the palm of your hands roll the dough. If doing 2 variations, divide the dough into 1 portions.
- Variation 1: Triple Cheese & Jalapeno: Sprinkle half of the mix grated cheese (excluding the cream cheese) and chopped jalapeno peppers. Knead the dough to distribute the mix-ins.
- Variation 2: Triple Cheese, Jalapeno & Chopped Turkey Cold Cuts: Sprinkle half of the mix grated cheese (excluding the cream cheese), chopped jalapeno peppers and cold cuts. Knead the dough to distribute the mix-ins.
- Using a Kitchen Scale, divide the dough into 15 pieces or to whatever portion you prefer.
- Cream Cheese: Divide the cream cheese into 15 portions, then divide each portion to 4 cubes. To each piece of dough , add 4 small cubes of cream cheese. Do not knead it, just press it inside and scatter it. Watch the video to see how I did it.
- Transfer in a parchment lined baking sheet and let rest for 60 minutes or until the bread puff-up. This could take 60 – 90 minutes depending on the temperature in where you leave it to rest.
- To help the dough rise better,Pre-heat the oven to 110F then turn it off. Cover and let rest inside the pre-heated oven
- DO NOT forget to stop it, you only want the oven to warm up for the dough to rise, you do not want to dough to be baked. Some oven has a proofing setting, mine doesn’t, so this is my trick.
- Add more cheese on top and 1 piece of Jalapeno pepper each.
- Bake at 350F in the lower rack for 20 minutes, then move to the middle rack and back another 5 – 8 minutes. Watch out for the browning. Cover with aluminum foil if the top and sides are browning too fast.
- Leave the bread in the pan for 10 minutes once out of the oven and then transfer to a cooling rack.
