Pre-heat, stir,beat and stir. Four simple and easy steps are all you need to do to have these Chocolate Zucchini Muffins. This is just one of the reason why you would want to make these muffins. Life is already hectic as it is, so why make it more complicated?
If being an easy recipe is not enough reason for you to make this muffin, how about if I tell you that this muffin taste so good, like seriously good! It’s soft, moist, loaded with chocolates and the most important thing, you wouldn’t be able to taste the zucchini in it at all. It’s like it doesn’t even exist, a ghost ingredient.
I have to admit that I was one of those people who raised my eyebrows the first time I saw a bake product recipe that uses zucchini. In my mind, vegetable like zucchini does not mix with bake products. I like to eat it with savory meals, or in a salad or pasta but not in bread, cake of muffins. That was a long time ago, I am a change woman now and a lover of zucchini in bake goodies. I am glad I convinced myself to try making it because I ended up liking it.
Zucchini even on its raw form, or when used in pasta or salad doesn’t have any taste unless you season it. It does have a lot of water and no taste what so ever, it’s just like cucumber. This is why mixing it in bake products doesn’t affect the taste, what it gave the muffin is additional moisture, making the muffin moist, soft and compact just a good muffin should be.
Chocolate ganache is optional, but I wouldn’t skip it if you can. There’s nothing like Chocolate Zucchini Muffin with chocolate ganache. The decadent chocolate really made the muffin so good specially when it’s still warm. Oh it literally melts in your mouth, super chocolate heavenly treat! I hope I gave you enough reasons to give it a try. Go ahead eat your veggie and enjoy the muffins too! Let’s get started!
Big Batch Ingredients (makes 12 pieces):
- 1 1/2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 2 eggs
- 1 cup granulated sugar
- 1/2 cup milk
- 1/4 cup canola oil
- 1/2 cup grated zucchini, excess liquid squeezed out
- 1/2 cup chocolate chips
- Chocolate Ganache
Small Batch Ingredients (makes 6 pieces):
- 3/4 cups all-purpose flour
- 1/4 cup cocoa powder
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 egg
- 1/2 cup granulated sugar
- 1/4 cup milk
- 2 tbsp canola oil
- 1/4 cup grated zucchini, excess liquid squeezed out
- 1/2 cup chocolate chips
- Chocolate Ganache
Instructions:
- PREHEAT oven to 375F.
- STIR flour with cocoa powder, baking powder, baking soda and salt in a medium bowl.
- BEAT eggs with sugar, then stir in milk and canola oil in a large bowl until combined.
- STIR in flour mixture, then zucchini and chocolate chips. Scoop batter into a greased 6/12-cup muffin pan. Bake until a cake tester inserted into centre comes out clean, about 20-22 min. Check 5 minutes before the minimum suggested baking time (20 mins). As always, do not over bake. Cool muffins in pan.
- Loaf Pan size 7-inch : Bake for 30 – 35 minute
