4 Easy Popsicles to Beat the Summer Heat

We had been a blast with the Summer heat here in Vancouver, BC. Probably, I am not qualified to brag about 37C heat as other places could be hotter than this but for BC, this is rather hot. Summer is the season that I wait the most in the year. Summer is FUN 🙂 even though it could get too hot. Summer means more outdoor activities ( when I can tolerate the heat), Summer means more fresh Summer fruits, more Summer veggies and more cold treats and drinks.

I had been drowning myself with iced tea and ice cream lately and it’s only the start of the week. We started getting hot weather last weekend and it will continue the whole week. Ice cream is my best friend, keeps me cool, keeps me happy 🙂

I finished one of my large tub ice cream, although not in one seating, it made me think. If this weather continues for more days, I cannot continue on going crazy eating ice cream. Well, in reality I can but I should not. This is when I decided to make some yogurt based popsicles. A little bit healthier than ice cream and it is fun to make. I love making different variations to try.

I made few popsicles in the last years, not a lot when I looked back. This year, I hope to make more variations. I have collected four of the once I made and this is what I want to share with you today.

Berries are nice fruits to use for popsicles. The first one I made was Very Blueberry Yogurt Popsicle which turned out great. Love how this look like too. The tangy yogurt and the blueberry worked well together.

This Mango Creamsicle is my favourite, and you will know why when I tell you about the ingredients. Vanilla Ice Cream and Mango, just 2 ingredients. It is not as healthy as using yogurt, but we can give ourselves a break and indulge on this one. This one is easy to make. You simply melt the vanilla ice cream, puree the Mango and pour them alternately in the mold. It is heaven! So creamy, so dreamy.

If you want to stay on the good side, this Nothing but Fruit Popsicle is for you. You can add less or more sweetener as you like or even skip it altogether. Love the alternating flavor that you get from this popsicle.

Mango & Banana Overnight Oats Popsicle

Anything that you can blend and freeze, you can make into popsicles. If you made overnight oats smoothie before, this is basically what it is. You make the oats and leave them soaking overnight and blend them then pour in a popsicle mold. Instead of drinking it, you are just eating it. Different state but the same delicious treat.

How to remove the Popsicle from the mold

Removing the popsicle could be frustrating at times, but if you know how to properly do it, it will not drive you crazy. If you are using a non-silicone mold like what I have, pour a warm water in a large jar then quickly dip in and out the Popsicle mold. Pull the handle to loosen it, continue dipping until it totally loosens. This will allow easy release. Make sure not to have the water too hot, you don’t want to melt the Popsicle even before you get to take it out.

Alternatively, you can also run it under a warm water (from the faucet) and keep on rotating to warm both sides of the popsicle. If you can find a silicone mold, that would make your life easier, but in case you cannot then just follow this simple step and you’ll get the popsicle out ready to enjoy.
