I had been holding off posting anything too sinfully delicious, after all January is for back to healthy eating, right? Remember all those delicious feast we had during the holidays? Oh well, now that it is February, it is a good timing to gradually and happily enjoy treats again. Why February? Well, February is the Valentines Day month, and whether you are celebrating or not, you have the right enjoy treats becuase we all deserve it 🙂 is that a good enough excuse?

Today I am sharing with you a chocolate cake recipe, a special one. A Banana Chocolate Cream Cheese Cake that is great for any day of the year. Forget about Valentines Day, make this cake anytime you feel like to. This is a small batch recipe, a 6-inch cake but still good enough for sharing. This cake is quiet indulgent with the banana and cream cheese swirl on top so please share, try not to eat all this by yourself 🙂

When it comes to this cake, slightly underbake is better as the remaining heat will still continue finishing off the cake.

Cake Ingredients:

  • 1 large ripe Banana
  • 1/2 cup Plain Greek Yogurt
  • 1 Egg
  • 2 tablespoons Flavorless Oil
  • 1/2 cup Brown Sugar
  • 1/2 tablespoons pure Vanilla Extract
  • 1 cup All-Purpose Flour
  • 2 tablespoon Cocoa Powder
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Baking Soda
  • 1/2 teaspoon table Salt
  • 100g chopped Chocolate or Chocolate Chips

Cream Cheese Swirl Ingredients:

  • 3 tablespoons Cream Cheese – softened
  • 1 Egg Yolk
  • 3 tablespoons granulated Sugar
  • 1/2 teaspoon pure Vanilla Extract

Instructions:

  1. Make the Cream Cheese Swirl: In a bowl, beat the softened cream cheese, sugar and egg yolk. Set aside while you make the cake.
  2. Mix Wet Ingredients: In a separate bowl, mash the ripe banana. Add the greek yogurt, pure vanilla extract, oil, egg and brown sugar.
  3. Sift the all-purpose flour and cocoa powder onto the wet ingredients mixture. Mix until just combined.
  4. Set aside 3 tablespoon of the batter.
  5. Pour the remaining batter in greased and parchment line 6-inch pan. Add chocolate chips or chopped chocolate on top.
  6. Cover the top with the cream cheese mixture.
  7. Doll up on top of the cake the set aside chocolate batter. Using a pointed object, create a swirl pattern.
  8. Bake at 350F for 45 minutes

If you happen to have any leftovers, storing this cake is a breeze. Simply wrap it tightly in plastic wrap or place it in an airtight container and keep it in the refrigerator. This will help maintain its freshness and moisture for a few days.
