[VIDEO] Bakery Style Zucchini Banana Chocolate Muffin

We are going to make something big today. We are going to treat ourself to a warm jumbo Zucchini and Banana Chocolate Chip Muffin, how does that sounds to you? 

It is summer time and zucchini is one thing that I have a LOT in my place right now. Zucchini is one vegetable that I love to grow in my garden during Summer. It is very easy to grow, and return always pays off. We are talking about an overload of zucchini for just 1 plant. So when life gives us zucchini, we make it to something delicious! Like this muffin that we are making today.

I don’t know about you, but if someone offers me this muffin, I would not dare hesitate to take it. This muffin is not only big, it is moist and loaded with chocolate goodness inside and out. Yum!

Every week I bought about 7 pieces of banana and I always reserve 1 piece for use in baking. 1 banana is all you need to make this jumbo muffins. When I say 1 banana, that doesn’t mean you don’t need the other ingredients, of course you do! 🙂

A lot of recipes calls for 2-3 pieces of banana but this recipe calls for only 1. Don’t worry, even with only 1 banana, this muffin is not looking is softness and moisture. That’s where the magic of zucchini and yogurt comes in. Both of these ingredients are sure to provide the moisture that any bake products need. I did not even use any oil, butter or milk because just these 2 were enough to get all the moisture the muffin needs.

About This Recipe

  • Ease in Making the Recipe: Super easy! If you watch the video, you will see how easy it is to make this muffin. You can make this muffin in less than 60 minutes. Baking time for these large muffins is about 30 minutes, and the time to mix all the ingredients is probably less than 30 minutes. It is that fast.
  • Ingredients: Easy to find ingredients, promise. A lot of these are basic ingredients when making banana muffin or bread. The only 2 exceptions are plain greek yogurt and zucchini, but even these 2 are easy to find.
  • Texture, Taste & Flavor: If you hate the word “moist”, then cover your ears and skip this line because I am about to say, it is very soft and moist. Thanks to the banana. zucchini and yogurt. These muffin is loaded with chocolates inside and out so you will not miss it, it is all over!
  • Make-Ahead: Yes you can make this ahead of time. and even freeze it. I only made 3 large pieces and gave 2 to my friend so there is really nothing to freeze.

Bakery Style Jumbo Muffin

I baked this in a large muffin tin to get the bakery style muffin. The baking time took about 30 minutes because of the size. You can bake this in a regular size muffin, you can make 6 pieces and baking time should be about 18 – 23 minutes. Check by inserting toothpick in the center, it should come out clean.

Squeeze the Zucchini

For the zucchini, I used a grater then I squeezed it to remove the water from it. This is very important as using it as is could end up with a runny batter. There is no zucchini taste in the muffin. Zucchini is just to add extra moisture plus it is a great way to sneak in veggie in your baked goods. I bet you if you gave to to anyone without telling them there is zucchini in here, they will not know.

Ingredients
  

  • 1 large Banana
  • 1/4 cup Brown Sugar
  • 1 Egg – room temperature
  • 1/4 cup Plain Greek Yogurt – room temperature
  • 1/4 cup Zucchini
  • 1/2 cup Almond Flour
  • 3/4 cup All-Purpose Flour
  • 2 tablespoons Cocoa Powder
  • 1 tablespoons Baking Powder
  • 1/4 teaspoons Baking Soda
  • 1/3 teaspoon Salt
  • 1/3 cup Chocolate Chips

Equipment

  • Oven
  • Mixer

Method
 

  1. Preheat the oven to 400F.
  2. Mash the Banana: Add egg and brown sugar. Mix until fully combined. Add greek yogurt and grated and squeezed zucchini. Mix to combine.
  3. Sift the cocoa powder, all-purpose flour, baking powder, baking soda and salt.
  4. Add the almond flour and manually mix until no more raw ingredients showing.
  5. Add chocolate chips and mix until distributed.
  6. Scoop in a large muffin tin. Top with more chocolate chips.
  7. Bake at preheated 400F for 10 minutes in the lower rack. Then lower the temperature to 350F and bake for another 5 minutes. Transfer in the middle rack and bake for another 12 minutes.
    *** Because this is large muffin, baking in the lower rack will help the bottom of the muffin bake well. Baking in the middle rack will help bake the top of the muffin.
