This adorable and delicious Chocolate Dipped Coconut Macaroon is easy to make with only 5 ingredients. No fuzz in finding the ingredients, plus the steps are so simple and easy. Whether you dip it in melted chocolate or not, this is going to be a real nice treat that you can share with your friends. Let us go make it, shall we? First, let us what the video on how I made this.
Overloaded with coconut and generously coated with dark chocolate, Chocolate Dipped Coconut Macaroons made it to my favorite cookie list for the holidays or even for everyday grab and go piece of dessert. A small ball of coconut, baked until golden brown, then dipped into melted chocolate for a good balance of sweet, salty and chocolatey indulgence.
This is the kind o Macaroons that I know, made from sweetened condensed milk and desiccated coconut. Simple, easy, Fool proof and no fuzz in making it compared to French Macarons. It may not look as fancy and delicate as French Macarons but it’s delicious in its own way, and when you see how simple and easy it is to make it, you wouldn’t even think twice in trying it (assuming of course that you like coconut desserts). I like the simplicity of this dessert as it once again prove that you can have a nice delicious piece of dessert by juts using simple ingredients.
The base basically was made using 3 basic ingredients (coconut, sweetened condensed milk and egg white) if not counting vanilla extract and salt because you could make this without it. After that, you can enjoy it on its own even without dipping it in chocolate, but I personally would not skip it. For me, the chocolate dip is a MUST and I think you would agree with me (hopefully) once you try it. I you are not sure, dip few pieces and leave few pieces plain. Then taste and let me know which one you like best.
To Dip or Not to Dip
I am always bias when it comes to dipping or not dipping. I am always on the dip it team, it’s chocolate! So why not? I like using dark chocolate to dip the bottom, I find that the dark chocolate flavor and slight bitterness balances the sweetness of this coconut macaroons. You can use any chocolate that you like, but bear in mind when you make the decision that since this recipe uses condensed milk which is quite sweet already. Using semi-sweet or white chocolate (definitely don’t) will make it even sweeter. But if you are really on to sweet stuff, then feel free to use semi-sweet chocolate, or white for an extra sweet dessert. I have 2 video recipes on how to make chocolate ganache. One is using heavy cream which is the traditional recipe, and one that uses milk to make it lighter. You can use either one, it will be great.
Since this cookie is very easy and simple to make, this makes it perfect for gift giving on special occasions, holidays or even just on regular days. I used this as one of the item in my cookie platter and it is one that always vanished first. Try it and let me know how you like it. Let’s get stared!
Ingredients 24 pieces:
- 3/4 cup COLD sweetened Condensed Milk
- 1/4 teaspoon fine Salt
- 1 1/2 teaspoon Pure Vanilla Extract
- 1 large Egg White – room temperature
- 2 cups shredded Unsweetened Coconut
- 2/3 cup Chocolate Ganache
Ingredients 8 pieces:
- 1/4 cup + 1 tablespoon COLD sweetened Condensed Milk
- 1/4 teaspoon fine Salt
- 3/4 teaspoon Pure Vanilla Extract
- 1 large Egg White – room temperature
- 1 1/4 cup shredded Unsweetened Coconut
- 1/3 cup shredded unsweetened Coconut for coating (optional)
- 1/3 cup Chocolate Ganache
Instructions:
- Mix All Ingredients In a Bowl: Add condensed milk, salt, almond extract or vanilla extract, egg white and desiccated coconut. Mix until combined. The texture should be not too wet and sticky, just enough to hold into a ball shape. If the mixture is too wet, just add more coconut about 2 tbsp and adjust as needed until no longer sticky and wet to handle.
- Scoop into small ice cream size portion, then roll each piece in dessicated coconut.
- Bake at 350F for 16 minutes, or until golden but not fully toasted. Let cool completely before dipping in melted chocolate.
- Make the Chocolate Ganache: I have both the using cream recipe and using milk recipe. Check them out.
- Dip in Chocolate Ganache: Dip bottom of each piece into Chocolate Ganache. You can dip it as thin or thick as you like. Arrange in a baking sheet line with parchment paper or silicone mat. Let sit until chocolate has solidify.
