Matcha & Me

I never liked drinking tea before. I used to make a joke of it tasting like a grass. Not that I have eaten a grass but you get what I mean, those kind of corrolation to something tasting bad when you cannot stand something. I do not even understand how people can drink it, especially those peole who drink it black.

Fas forward many years later, here I am living in Canada and I started my morning routine by drinkng green tea, of all the available tea. Some of my friends said that green tea is the worst tasting tea among all the tea as it taste “grassy” and bitter at times. I actually don’t kow how I ended up preferring green tea, I just did. I also drink other tea like earl grey or chammomile tea but green tea is what I have most of the time at home.

Similar story goes for Matcha tea. I actually do not recall how I ended up drinking it because sometimes when I drink it, I cannot stand the bitterness of it but I still order it anyway. So what it is then? Maybe I am attracted tho the beautiful green color swirled with foamed milk. But it doesn’t really stop there, I actually like matcha flavored desserts, like cakes, ice cream, cookies or anything with matcha. Seems to have power over me 🙂 and I cannot explain why.

What is Matcha Powder?

Matcha powder is a type of finely ground green tea powder, traditionally used in Japanese tea ceremonies. It is made from shade-grown tea leaves, which are carefully ground to produce a vibrant green powder. Matcha powder is known for its unique earthy flavor and is often used in various culinary applications, including beverages, baked goods, and desserts. I thought Matcha would be a nice variation to make for a muffin. I was thinking of what would make great pair with it, two came to my mind. White chocolate and raspberry and I decided to go for white chocolate because that is what I have on hand. I have to say, it was a great choice after all.

Ingredients
  

  • 1 medium size about 100g ripe Banana
  • 1 Egg
  • 3 tablespoon Flavorless Oil
  • 2 tablespoons Milk
  • 1/4 cup granulated Sugar
  • 1 cup All-purpose Flour
  • 1/4 teaspoon Baking Soda
  • 1/3 teaspoon table Salt
  • 1 tablespoons Baking Powder
  • 2 teaspoon Matcha Powder
  • 1/2 teaspoon pure Vanilla Extract – optional
  • 1/3 cup White Chocolate Chips

Equipment

  • Oven
  • Mixer optional

Method
 

  1. Preheat the oven to 400F.
  2. Mix mashed banana, egg, oil, milk and vanilla extract.
  3. Sift the flour, baking soda, baking powder, salt and match powder into the mixed wet ingredients. Add 1/4 cup of the chocolate chips.
  4. Divide into 6 portios and pour in the muffin pan lined with muffin liner.
  5. Top with the remaining white chocolate chips.
  6. Bake at 400F for 5 minutes then at 350F for 13 – 15 minutes. Toothpick inserted in the center should come out clean of batter.

Storage

These muffins stay soft and flavorful when stored properly. Keep them in an airtight container at room temperature for a couple of days, or refrigerate to extend freshness. They also freeze well—just thaw at room temperature for an easy, ready‑to‑enjoy treat.
