[VIDEO] Baked Blueberry Glazed Donut

It is once again the season of Blueberry, and we are going to make the most of it starting with this Baked Blueberry Glazed Donut (or Doughnut). A homemade baked donut glazed with fresh Blueberry puree and icing sugar. This is definitely without a doubt a sweet tooth treat. No counting of calories please, just eat and enjoy!

I was never a fan of donut until I discovered the baked donut version. This donut is soft, fluffy, lighter and they are baked not fried. Normally, I can only eat 1 donut, but with this baked version, I can finish 2 easily and I wouldn’t mind a 3rd too.

How to Make Bake Donut

Biggie or Mini

You can make this donut using a regular donut pan size, or go for the mini donut. I made this before and I used half of the batter to make regular size donut and half of the batter using mini size donut. The baking time will vary, big will require more baking time. I Ieft the baking time in the instructions below.

Blueberry Glaze

For the glaze, we are using Blueberry puree instead of water or milk to mix with the icing sugar. I like the bits and pieces of Blueberry skin showing up on the glaze and the nice purple color it gave. However, do not expect a strong Blueberry flavor. Blueberry do not have a strong flavor to begin with, and when mixed with sugar, even more that is is being tamed of whatever flavor is has. The great way to add flavor in the glaze is by adding vanilla extract and zest of 1 lemon. Adding that lemon zest ill somehow give a fresh citrus flavor and will somehow tame the sweetness of the sugar. Not to mention, that will add a beautiful glaze with the specs of yellow along with the Blueberry skin. Give it a try. I ran out of lemon so I was not able to do it in the video but I did try it before and I really like it. You can call it Baked Blueberry and Lemon Glazed Donut.

How to Make Blueberry Glazed Donut

Single of Double Dip

The choice is yours. This glaze can do double dip of these donuts, you will have more than enough to do that. If you prefer if less sweet, stick with single dip and coating, but if you like it sweeter, then double dip it is. Now when doing double dip, make sure to wait for the glaze to set before you dip it again. This way the second coating will stick to the top.

Why buy a fried donut when you can make and bake it a home? Try this and I guarantee that you will not regret it. Let’s get started!

How to Bake Donut

Ingredients:

  • 1/3 cup melted Coconut Oil or any Flavorless Oil
  • 1/2 cup Buttermilk ( You can make homemade buttermilk by adding 1 teaspoon of lemon or white vinegar to 1/2 cup of milk. Leave it for 5 minutes before using)
  • 1/2 teaspoon Vanilla Extract
  • 1 Egg – room temperature
  • 1 1/4 cups All-Purpose Flour
  • 1/2 cup granulated White Sugar
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt

Glaze:

  • 1/3 cup fresh Blueberry
  • 2 1/4 cup Icing Sugar
  • 1/2 teaspoon pure Vanilla Extract

Instructions:

  1. Prepare the Pan: Grease a 6 or 12 hole donut pan with oil or melted butter.
  2. Wet Ingredients: In a bowl, combine oil, egg, buttermilk, and vanilla extract. Set aside.
  3. Dry Ingredients: In another bowl, combine flour, sugar, baking powder, and salt.
  4. Combine wet ingredients with the dry ingredients and gently fold until batter comes together. Do not over mix to avoid getting a tough donut.
  5. Pour batter into piping bag and pipe into already greased donut pan.
    • If using a 6 hole donut pan, make sure to rinse the pan the second time before using it for the second batch of baking.
  6. Bake at 350F degrees:
    • Regular Size Donut Pan: 15 – 17 minutes until the sides starts to brown.
    • Mini Size Donut Pan: 10 minutes
  7. Cool Let cool completely while working on glaze.

Makes 12 regular size donuts

Blueberry Glazed Donut

Please note that this Blueberry Glazed Donut although using fresh pure Blueberry will not have a strong Blueberry flavor. I believe this is because the icing sugar is overpowering the flavor. An addition of extra flavoring like vanilla extract or lemon juice will extra extra flavor to the glaze. Just do not expect a strong Blueberry flavor because there is none.

Blueberry Substitute:

Once you have the plain donut, this is a good as having a blank canvass. You can use other glaze like Strawberry, Lemon, Cinnamon Sugar or chocolate. See my other donut post below for inspirations.

Instructions for the Glaze:

  1. In a mini food processor, blend blueberries until puree.
  2. In a bowl, mix powdered sugar and puree blueberries. Mix until smooth and no more lumps. You can control the consistency by holding back either the Blueberry puree or sugar. More puree and less sugar will be thin consistency, and the reverse will be a thick consistency. Adjust to your preference.
  3. Once the donuts are completely cooled, dip into glaze and let the glaze firm up on a cooling rack. You can do single dip, or double dip for a thicker glaze. If doing a double dip, make sure that the first caoting is set before doing the second dip.
  4. Arrange in a single layer tray. Wiremesh is better so the extra glaze can drip but if you do not have one, a large plate will work too. Do not put on top on each other while the coating is still wet.

  1. I just made this glaze and it came out great! I can’t speak for the donuts itself cause I wanted blueberry donuts with a blueberry glaze 🤔… so I mixed two different recipes together. The glaze was so pretty.
