Thin, crspy, buttery and absolutely addictive. This lengua de gato is a Filipino favorite cookie among locals and visitors. A very delicate cookie but do not be fooled by the apperance. They are quite easy to make and also eady to finish eating 🙂 You can make this anytime of the year, not just for the holidays.

Let me introduce you to Filipino delicacy

In this post, I will be sharing some of my favourite Filipino delicacy. I grew up in the Philippines. My parents are both amazing cook, such a blessing growing up with parents who love to cook. We are spoiled when it comes to home cooking. It was when I moved to the city with my siblings that I started getting into cooking. I cooked everyday, mastered most of the traditional Filipino dishes, and quite a few Filipino delicacy which I’ve shared in my website. I mostly make Leche Flan, Buko Salad, Ube (or Halaya) Biko, Palitaw and Gelatin. The rest of the traditional Filipino delicacy, we buy in the market. Those are the ones that are quite time consuming to make, so we just leave it to the experts and buy when we want them. I often ask my parents to buy some when they go to the market. They usually buy assortment of different things, it was heaven. As a kid, those were good times, good memories to remember. Some good things never last though, that is why we have to enjoy them while we can.

Then I left Philippines and moved to Canada. You know the saying, “You’ll never know what you missed until they are gone”? Well that’s how I feel when I think of those Filipino delicacies that I used to enjoy back home. Although there are a lot of new interesting dishes I got introduced when I moved to Canada, I still miss a lot of our Filipino dishes and delicacy. So I thought why not make them and share them with you. This is my way of sharing my culture, our cuisine, and a part of myself. What is Lengua De Gato?

Lengua de gato is the Filipino version of butter cookies. Their name means “cat’s tongue” in Spanish, after their characteristic oval shape. They are very thin and crunchy cookie. They are made from flour, butter, sugar, eggs and milk. Compared to the regular butter cookies that most people are familiar with, Lengua de gato is quite more fragile and thin. Lengua de gato is a popular treats bought by visitors and locals when visiting Baguio City, the summer capital of the Philippines.They are sold in small and big plastic containers and is a huge hit to anyone you gift it to.

About This Recipe

  • Ease in Making the Recipe: I would say that this is quite an easy recipe to make. The tricky part is keeping an eye on it while it bakes as it browns easily. Because the cookie batter is quite ligth and airy, it spread a lot when it bakes transforming it to a really thin crunchy cookie. The most that you will be doing here is creaming all teh ingredients together. You will definietly need a mixer to do this.
  • Ingredients: Very basic butter cookie ingredients, Egg white, sugar, butter, flour, salt annd vanilla extract
  • Texture, Taste & Flavor: This is a very thin, crunchy cookie with a milk vanilla taste. This is a little bit sweeter than regular american or european butter cookie.
  • Make-Ahead: You can definitely make thisfew days ahead of time. Just make sure to store it in an air-tight container.

Success Tips in Making Lengua De Gato

  1. Use room temperature butter and egg to get better mixing and lighter cookie batter.
  2. Keep an eye on the cookie edge while it bakes. This cookie can burn easily. If you notice, some of my cookie have darker edges.
  3. Use an oven thermometer if you have one. As mentioned, this cookie is very fragile and it burns easily so having correct baking temperature is crucial.
  4. Use a pipingbag with tip #21 for easier shaping of the cookie. You can also use a ziplock sandwich bag and snip one of the ends.
  5. Leave at least 1-inch apart as these cookies spreads a lot.
  6. Once done, let the cookies cool a bit. But make sure to peel them off the parchment paper/silicone mat while they are still warm. They will stick if you let them cool off completely and it’ll be difficult to peel them off thenUse a silicone mat or tray lined with a parchment paper . This will make the lifting of the cookie easier.

How to Store Lengua De Gato

Let the cookie cool completely and transfer it in an air-tight container to retain the crispy texture.

Ingredients:

  • 1/2 cup softened unsalted Butter – room temperature
  • 1/3 cup granulated Sugar
  • 2 Egg Whites – room temperature
  • 1/2 teaspoon pure Vanilla Extract
  • 1 cup Cake Flour – sifted
  • 1/3 teaspoon table Salt

Instructions:

  1. Mix the butter and sugar until light and pale in color, about 5 minutes.
  2. Add the pure vanilla extract and egg whites in 2 addition and continue mixing.
  3. Add the cake flour in 2 additions and mix until just combined.
  4. Transfer in a piping bag. Use a piping tip or cut the end of the piping bag to create an opening.
  5. Pipe in a parchment lined baking tray. Length should be about 3-inches. Leave about 1-inch space in between the cookie. This cookie spreads a lot.
  6. Bake at 320F for 10-12 minutes. Check at 10 minutes time. Once the edge of the cookie turns brown, the cookie is down. Do not over bake as this could get brown so easily.
