[VIDEO] Cardamom Pastillas De Leche

This milk candy is such a treat when I was growing u and even when I was already an adult. I guess there is something about milky creamy treat that I love so much. The best pastillas that I had was the one made by my grand mother in my father side. I have to say, that one is the BEST of the BEST and there is simply nothing better than that. What made it special was the use of fresh carabao milk. It was not shaped but instead in a thick consistency almost like blended oats consistency. We ate it with spoon, after sppon 🙂

Anyway, that one I cannot simply recreate and share with you so I am sharing a simpler easier version. It is still good and worth making. They are great for enjoying at home, or for gifting 🙂 Edible gifts are great option, they are budget friendly and they are very personalize.

In this post, I will be sharing some of my favourite Filipino delicacy. I grew up in the Philippines. My parents are both amazing cook, such a blessing growing up with parents who love to cook. We are spoiled when it comes to home cooking. It was when I moved to the city with my siblings that I started getting into cooking. I cooked everyday, mastered most of the traditional Filipino dishes, and quite a few Filipino delicacy which I’ve shared in my website. I mostly make Leche Flan, Buko Salad, Ube (or Halaya) Biko, Palitaw and Gelatin. The rest of the traditional Filipino delicacy, we buy in the market. Those are the ones that are quite time consuming to make, so we just leave it to the experts and buy when we want them. I often ask my parents to buy some when they go to the market. They usually buy assortment of different things, it was heaven. As a kid, those were good times, good memories to remember. Some good things never last though, that is why we have to enjoy them while we can.

Then I left Philippines and moved to Canada. You know the saying, “You’ll never know what you missed until they are gone”? Well that’s how I feel when I think of those Filipino delicacies that I used to enjoy back home. Although there are a lot of new interesting dishes I got introduced when I moved to Canada, I still miss a lot of our Filipino dishes and delicacy. So I thought why not make them and share them with you. This is my way of sharing my culture, our cuisine, and a part of myself. I hope you’ll enjoy the post and get to know more about Filipino cuisine.

What is Pastillas De Leche?

Pastillas de leche or simply pastillas is a milk based confections that is quite popular in the Philippines. They are made with basic ingredients milk and sugar. Pastillas evolved from being plain and simple to having different variants. You can find Pastillas with yema filling, purple yam, nuts and fruits. They are often shaped like a small tube wrapped in paper and sometimes they are shaped like balls and rolled in sugar to coat the exterior.

You can have them soft, hard and toasted. The texture and consistency changes depending on the proportion of the milk used in the recipe.

About This Recipe

  • Ease in Making the Recipe: Easy and fun. All you need to do is mix, shape and roll the mixture. It sounded so easy because it really is.
  • Ingredients: Plain pastillas de leche uses only 3 ingredients. 2 types of milk and sugar. Condensed milk is key to bringing the mixture together and for giving this treat extra creamy. This version is the simplied version with easier to find ingredients. Traditional recipe for this uses fresh carabao or cows milk simmed in sugar to end up with a thick consistenyc similar to condensed mik. Since I do not have access to that here in Canada, I used shortcut condensed milk instead.
  • Texture, Taste & Flavor: This version is more on the softer side. It is soft and creamy but just to set the expectation, the texture is not the same as when using fresh carabao or cows milk but it stil works. Work with what you have.
  • Make-Ahead: Definitely! This candy last long, probably 1-2 weeks and even longer. I only made small batch and I finished it even less than 2 wees.

Ingredients:

  • 1 cup + 2 tablespoon Powdered Milk
  • 1/3 cup + 1 tablespoons Condensed Milk
  • 1/2 teaspoons Cardamom – optional
  • 1/4 cup granulated Sugar

Instructions:

  1. Transfer the powdered milk in the bowl. Add the cardamom powder. Gradually add the condensed milk and mix until no longer sticky. Do not add too much powdered milk unless you want a hard pastillas.
  2. Divide the mixture into 2 portions. Roll into a 14-inch long then cut into 12 pieces. Alternatively, you can also roll the remaining portion into balls.
  3. Roll into granulated sugar.
