Small Batch Corn and Zucchini Fritters

I wished I made this Corn and Zucchini Fritters sooner than later. This is a really game changer. A very easy and simple recipe, a fritter that is loaded with Corn and more corn in every bite. Forget about fritters that are 70% flour, this fritter is the opposite. You can literally see the corn however way you look at it. Every spoonful and every bite is all about 🌽 corn and zucchini 🙂

Zucchini and Corn Fritters

For so long, I had been wanting to make a savory fritters recipe, I finally get to do it. With so many food and goods in my to do list, I am having difficulty having them done as quickly as I want to. For most of my cooking and baking, I had to time it with the meals that I am planning to eat for the week, this way I hit 2 birds in one stone.

Having to leave alone, my consumption of food is very minimal and it takes quite a long time for me to finish my food, and that is me making small batch recipes. Anyway, the important thing is I was able to finally make this Corn and Zucchini Fritters, and let me tell you this… they we’re AMAZING!! One of the famous line I tell myself “I wish I had done it sooner”!.

Zucchini Fritters

I like the fact that they are easy to make, more like a one bowl recipe. This corn fritters also have a lot of corn in it which was really great. It holds up the shape, it is fantastic as an appetizer and sometimes I even use it to make sandwich, like a veggie patty.

You can pair this with your favorite hummus, but I really like to use Tzatziki as a dip for this one. I feel that that the tangy lemony flavor works well with the fritters.

Small Batch vegetarian Corn Fritters

Ingredients:

  • 1 can (341ml) Corn Kernel
  • 1/4 cup grated Zucchini
  • 1/2 cup All-Purpose Flour
  • 1/2 teaspoon Baking Power
  • 3/4 teaspoon table Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 teaspoon Garlic Powder
  • 1 stalk of Green Onion
  • 1/4 cup fresh Cilantro
  • 1 Egg
  • 4 tablespoon Milk
  • 1 tablespoon Olive Oil
  • Oil for shallow frying

Instructions:

  1. Prepare the Zucchini: Wash and grate the zucchini. Squeeze to remove the water. Set Aside.
  2. Mix Wet Ingredients: Mix beaten egg, milk and olive oil.
  3. Add Dry Ingredients: In a bowl, mix corn kernel, zucchini, all-purpose flour, baking powder, salt, pepper, garlic powder, green onion, cilantro.
  4. Mix: Pour the wet ingredients to the dry ingredients and mix until combined.
    • If the mixture is too wet, you can add a bit of a flour just enough to be able to handle it without too much sticking in your hands when you sahpe it.
  5. Rest: Cover and let rest for at least 1 hr. You can also leave this overnight in the refrigerator.
  6. Shape: Divide into 5 or 6 balls and form into a patty about 4-inch size.
    • You can adjust the size to your preference
  7. Cook: In a pre-heated pan, add oil. I do not add a lot of oil when cooking this, just enough for the bottom to touch the oil but not fully submerge the patty.Transfer in a plate with paper tower to allow the oil to get absorb.
  8. Make the Tzatziki Dip: This is totally optional, you can use any dip that you like. I have a recipe of Tzatziki in my website, check it out.
  9. Serve: Transfer in a plate. Serve with Tzatziki and mix greens and veggies.
