This Non-alcoholic Pineapple Mojito recipe is perfect for those looking for a refreshing and delicious drink without the alcohol. It’s a simple and easy-to-make beverage that’s bursting with tropical flavors.

I’ve shared quite a lot of Summer drinks and cold treats in my website and I love all of them. But do I have a favorite? Yes, of course. I wish I coud say I equally love all of them but there are some that I make more than the others and this Non-alcoholic Pineapple Mojito is one of them. This was actually inspired by my Non-alcoholic Orange Mojito, a post that I shared last year. I fell in love with it and decided to make a variation of it, and this is what I came up with. I wouldn’t say it is original because there are a lot of pineapple mojito post already circling the social media, but this is my take on it. Simple, easy and refreshing.

Fresh pineapple juice is always better

I made this both with fresh pineapple juic and canned pineapple juice and I would say the fresh pineapple juice taste a whole lot better. It has a natural sweetness and a stronger flavor without the artifical taste. However, using a fresh pineapple juice requires an extra step of juicing it plus the fact that you will need a juicer to do it. A blender will work too, you just havve to manually strain the pulp so you only get the juice. Do not make it a show stopper if you do not have a juicer or a blender, a canned pineapple juice works a well and s also the more budget friendly option especially if you are making a large batch.

How To Make Simple Sugar Syrup

Simple syrup is simply dissolved and lightly reduced sugar + water. The basic ratio is 1:1, meaning 1 part sugar to 1 part water (i.e 1 cup sugar: 1 cup water), it is basically an equal portion of sugar and water.

However, if you like it thick and sweeter, you can do a 1:2 ratio (i.e 1/2 cup water : 1 cup sugar). The yield will be less, but it is thicker and sweeter which use you use less of it.

You can make sugar syrup using granulated white sugar for a clear syrup OR light or dark brown sugar for a darker syrup. The darker syrup are great for coffee or dark tea based drinks as this will not affect the color of the drink that much.

The clear syrup are best for drinks that you want to retain the original color without making it brownish in color. The clear white syrup tends to be sweeter than the brown sugar, but brown sugar have that light caramel flavor from the molasses in the brown sugar. In the end, it all boils down to preference.

Ingredients:

  • 1 cup Pineapple Juice
  • 12 Mint Leaves
  • 1/2 Lime Juice
  • Ice Cubes
  • Fresh Pineapple – for garnishing

Pineapple Syrup Ingredients:

  • 1/2 cup granulated Sugar
  • 1/4 cup Pineapple Juice
  • Juice of 1/2 Lime (or whole Lime for a more tart flavor)

Instructions:

  1. Make the Pineapple Syrup: in a pan, pour the sugar and pineapple juice. Stir until sugar is almost dissolved. In medium heat, bring to a boil for 3-5 minutes until the sugar is fully dissolved. Transfer in glass and let cool completely. It is recommended that you make this at least 1 day in advance to allow the syrup to thicken.
  2. Make the Drink: In a glass (or jar if making a large batch), pour the lime juice. Add the mint leaves, sugar syrup, 1/4 cup pineapple juice, ice and the lime skin leftover from squeezing the juice. Mash to release the flavor of the mint. Cover and shake the glass.
    3 . Add more ice then pour the remaining pineapple juice. Garnish with slice pie apple, lime and mint leaves.

Remember, you can always adjust the sweetness and mintiness according to your taste preferences. It’s the perfect drink for a hot day or any special occasion.
