Cold weather calls for a warm bowl of nourishing soup. Today I am sharing with you a simple and nourishing bowl of clam soup. This clam soup is easy to make and packed with flavor. A soup that can be a meal on its own and great paired with toasted bread or a cup of steamed rice for a more filling meal.

I’ve been on a crazy soup ride these past few days. From a nice beautiful sunny Summer days, here we are with cold rainy days. Weather like this always makes me crave for something warm before I eat anything else. I like having soup for breakfast or lunch or dinner 🙂 Basically, anytime of the day on a Fall and Winter Season.
Blogging my seem like an easy thing to do but in reality it takes a LOT of time to finish a single post. In my Take a Peek at the Behind The Scenes of Food Blogging, I shared with you my process when creating a post. Although it takes a lot of time, it gives me a lot of joy doing thing. Blogging keeps me sane 🙂 and help me balance my life between work and personal time. I love sharing recipes with you as well as my travel escapades. I had been busier lately with work and I started making my meals on the fly, you know whatever I have on hand. Something that I do not have to plan just like when creating a posts for the blog. I thought I would create a short post about this, not as elaborate as my full post but enough to give you idea on how you can make it at home. This will be easy and quick recipes that you can make in less than 30 minutes max or even 5 minutes less. We all need a short break from the kitchen, but that doesn’t mean we have to stop making delicious meals to nourish us.

We are just starting Fall season and just like many of you guys, I cannot resist making sweet treats. Apple desserts, pumpkin, sweet potato and about just anything that is cozy and screams Fall. I think I had a bit too much these past few days and I had been craving more savory food now. To be specific, a hot bowl of warm nourishing soup. This is what we are making today.
Today’s Quick & Easy Recipe
A brothy, comforting bowl of Clam Soup, that’s what we’re making today. I like brothy soup, what I mean is soup that is not cream based. Plain and simple seasoned broth like this soup. I find it lighter compared to creamy soup and just fitting when all I want is to sip a warm soup to keep me warm.
This clam soup is simple, yet flavorful. The flavor came from the aromatics and the clam itself. I used frozen clams because that was what I can find in the grocery close to me but if you have access to fresh one, definitely go for it.
A Soup so easy to make, ready in 30 minutes or less
To make this soup, all you need to do is to sauté the aromatics and boil the clams with it then season it as you please. This soup is so easy to make and can be ready in 30 minutes of less. I used basic seasonings which you can pretty much change to whatever you like but definitely do not skip the ginger. Ginger helps lessen that strong taste you get from seafoods like clam.

A homemade vegetable broth for a simple yet flavorful taste
For the broth, I used homemade vegetable broth. Making your own vegetable broth is so easy and budget friendly. Simply collect and freeze your vegetables scraps and trimming and freeze. When you need a broth, pour water in a pan and boil the vegetable trimming you collected until the water turns brown. That’s a sign that the vegetable has infused the broth with flavor. Pass in a sieve and collected the broth. You can use it immediately or refrigerate it for a week or freeze it up to 3 months.
When freezing it, portion it in a large ice cube tray or silicon muffin cups. Freeze then remove from the tray and transfer in a ziplock bag. When you are ready to use it, simply put it in a pan and bring to a boil to thaw it. That easy, and you save few bucks that you can use to buy something else.
You can serve this as is, pair with with a toast or serve it with steamed rice. Enjoy!
Ingredients:
- 1 tablespoon Flavorless Oil
- 1/2 medium Onion – finely chopped
- Fresh Ginger
- 4 cloves Garlic – minced
- 400g Clams (fresh or frozen)
- 3 cups Water or Vegetable Broth
- 3/4 teaspoon table Salt
- 1/4 teaspoon Red Chili Flakes
- 1/4 teaspoon Black Pepper
- Fresh Green Onion – chopped
Instructions:
- In a heated pan with oil, saute the onion, ginger and garlic until fragrant. Add the washed and cleaned clam. Pour the broth and let simmer for about 10 minutes or until the clam opens. Add seasonings and chopped green onion. Taste and adjust seasoning as desired.
Serves 1 – 2
