[VIDEO] Creamy Asparagus Soup For Two

Asparagus Soup, so easy, so delicious. Soup had been my comfort these past few days. We got an early cold days this year, the cold feels almost like Winter cold. In fact, we had the first fall of snow juts couple of weeks ago, which is unusual. Here in Vancouver, we don’t get as much snow ad the other provinces, were more of the rain province more than the snow. The kind of cold that I make me bundle up and wrap myself with layers and layers of clothing. This is the weather where Soup, oatmeal and stews are always present in my weekly menu. Soup is often easy to make, and they are sure to make me feel cozy and warm. So today, that’s what we are making. A simple Creamy Asparagus Soup. Let’s get started!

Blogging my seem like an easy thing to do but in reality it takes a LOT of time to finish a single post. In my Take a Peek at the Behind The Scenes of Food Blogging, I shared with you my process when creating a post. Although it takes a lot of time, it gives me a lot of joy doing thing. Blogging keeps me sane 🙂 and help me balance my life between work and personal time. I love sharing recipes with you as well as my travel escapades. I had been busier lately with work and I started making my meals on the fly, you know whatever I have on hand. Something that I do not have to plan just like when creating a posts for the blog. I thought I would create a short post about this, not as elaborate as my full post but enough to give you idea on how you can make it at home. This will be easy and quick recipes that you can make in less than 30 minutes max or even 5 minutes less. We all need a short break from the kitchen, but that doesn’t mean we have to stop making delicious meals to nourish us.

Today’s Quick & Easy Recipe

Soup is in the menu today, just what I needed. Asparagus Soup always makes it to my soup rotation as soon as the rainy and snowy season starts. It is like a treat having this Asparagus Soup as often times Asparagus tends to be expensive. It’s ok, because sometimes we need to pamper ourself, we deserve it. What I love about this soup is how easy it is to make it, plus it uses simple and easy to find ingredients. What’s not to love? If you are like me who loves to have soup anytime of the day, then have this added in your soup rotation. It’s always nice to have options.

Make it Dairy Free

I made this soup with half and half cream but if you want to keep it dairy free, you can use dairy free milk instead. Coconut is a good option if you like a more complex flavor. You can make the soup as thick or runny as you like, I am more in the in between consistency. I don’t like my soup too thick and I don’t like it too runny either. By juts simply adjusting the amount of liquid, broth to be specific, you can adjust the consistency.

To avoid wasting too much of the Asparagus, I used up to the soft end of the end. You can tell when you’ve reached the hard part when it gets hard to cut it. That part I put in my compost. Use as much as you can to avoid food waste.

sparagus Soup for Two

Ingredients:

  • 200g Fresh Asparagus
  • 1 tablespoon Butter
  • 1 tablespoon All-Purpose Flour
  • 1/3 teaspoon Salt
  • 1/8 teaspoon Black Pepper
  • 1 1/2 cup Vegetable Broth
  • 1/3 Cup heavy Cream or any full fat Milk

Instructions:

  1. Prepare the Asparagus: Wash the Asparagus and cut into small pieces. Set aside
  2. Make the Roux: in a heated pan, add the butter and swirl the pan or move the butter around using a spoon until is fully melted. Add chopped onion and cook until no longer translucent. Add flour and quickly stir until the consistency becomes thick like a paste. Gradually add the broth while continuously stirring until the flour paste (roux) is completely dissolved. Do not left unattended and do not stop stirring until all the broth has been added and the roux completely dissolved.
    Add the chopped Asparagus and simmer in medium heat for at least 20 minutes or until the Asparagus are soft.
  3. Puree: Either transfer the mixture in a blender and puree or use an immersion blender to puree. Return into the pan then add the cream or milk, salt and pepper. Cook for another 5 minutes then taste and adjust seasoning as desired.
  4. Serve: transfer in a bowl and sprinkle Parmesan cheese on top (optional)
