I do not stocked up a lot of canned goods, but from time to time I woul have a can of ready to eat beans for emergency purposes. You know the kind of scenario when you woke up late and in hurry to leave but want to have a quick satisfying breakfast. Or when you just feel lazy to cook anything but still want to eat something that is going to amke your belly happy 🙂 This recipe is that kind of recipe. Easy, nourishing, satisfying and easy.

Canned Beans for a quick meals ready in less than 15 minutes
Because this was meant to be a quick easy breakfast, I used canned beans but you can make your own if you have time. I still believe that homemade is still better, that is if you have time. Do your thing, whatever works for you.
Season to Taste
I’ve added seasonings and spices as I always find canned beans quite bland. I know it is ready to eat, but if you are happy on how your canned beans taste, then skip the seasonings and spices. I also like mine a bit spicy, so there goes a lot of peppers 🙂

Eggs! As many as you like
My skilled may looks so sad with just 1 egg 🙂 but that is my capacity. This 6-inch skilled can hold up tp 4-5 eggs so definitely, if you are feeling hungry, add as many eggs as you like.

This recipe not only showcases the versatility of canned beans but also highlights how you can create a wholesome meal with minimal ingredients and effort. So, grab your skillet and let’s get cooking! You’re about to discover a breakfast that’s as easy to make as it is delightful to eat.
Ingredients:
- 1 Can of Tomato Based Beans
- pinch of Salt, Black Pepper, Paprika, Cayenne Pepper
- 2 teaspoon Granulated Sugar
- fresh chopped Chives – optional
Instructions:
- Pour the canned beans in the pan. Add all the seasonings, spices and sugar. Bring to a simmer. Taste and adjust seasoning as desired.
- Make a hollow in the center and crack the egg on top. You can add as much egg that can fit in your pan.
- Cover and cook in low heat until the egg is cook to your liking.
