[VIDEO] Avocado Ice Cream 🍓 Float

I am having a blasts sharing cold drinks and treats with you. This is one kind of post I look forward doing during Summer, short and sweet but delicious. Today we are making Avocado Ice Cream Float. A combination of creamy Avocado topped with scoop of ice cream and chopped toasted Almonds. This is so good, promise ❤️.

With the weather getting warmer and warmer everyday, I think we could all agree that we need something that will cool us off and keep us feeling refresh. Since it is Summer, I am making a seasonal post just for the Summer season. The post will mostly be about Summer drinks and frozen treats to keep us cool and comfy during the Summer season. If it is not Summer where you are right now, do not worry because you can always go back and search for these recipes whenever Summer arrives in your area or if you just want to get chilled. Some of the drinks that I am sharing here can be made any day of the year, I say bring the ice cream out on Winter 🙂

If you are familiar with “Float” drink, like Root-beer Float (or A&W Burger.chain) the idea is to add ice cream on top of a soda drink. I never liked it because I do not like the taste of root beer drink. But nonetheless, this recipe is inspired by that idea. Ice cream on top of something, and that something here is a puréed creamy Avocado, like a smoothie.

There’s a lot of variations that I want to make for this, like Strawberry, Mango, Blueberry, Peach and chocolate. What I have was Avocado when I was making this, so that was the variation I went for. No regrets there, so good I’ve made this 3x already. Summer, Avocado season, so why not. I really enjoy this one and I cannot wait to share the other variations I mentioned above. Stay tuned for that, for now, let’s make this Avocado Ice cream Float. Enjoy!

How To Make Simple Sugar Syrup

Simple syrup is simply dissolved and lightly reduced sugar + water. The basic ratio is 1:1, meaning 1 part sugar to 1 part water (i.e 1 cup sugar: 1 cup water), it is basically an equal portion of sugar and water.

However, if you like it thick and sweeter, you can do a 1:2 ratio (i.e 1/2 cup water : 1 cup sugar). The yield will be less, but it is thicker and sweeter which use you use less of it.

You can make sugar syrup using granulated white sugar for a clear syrup OR light or dark brown sugar for a darker syrup. The darker syrup are great for coffee or dark tea based drinks as this will not affect the color of the drink that much.

The clear syrup are best for drinks that you want to retain the original color without making it brownish in color. The clear white syrup tends to be sweeter than the brown sugar, but brown sugar have that light caramel flavor from the molasses in the brown sugar. In the end, it all boils down to preference.

Ingredients for Avocado Ice Cream Float

This Milk Drink uses only 3 ingredients, Beets, sugar and milk and is very easy to make. You can flavor it or leave it plain, the choice is yours.

  • Avocado – I used fresh Avocado 🥑 but a frozen one will work too if you like a smoothie like consistency. Frozen avocado gives a thicker creamier texture l, almost like soft serve ice cream which works great with ice cream on top.
  • Milk – Full fat milk for a creamier taste but if you want to keep it dairy free, feel free to use non-dairy milk substitute, as well as dairy free ice cream.
  • Sweetener – Use liquid sweetener, any that you prefer. I like using simple syrup for cold drinks and smoothie as they dissolve easily. Avoid using granulated sugar as it does not dissolve easily and could leave a grainy texture.
  • Ice Cream – Choose whatever ice cream you want to top this. I feel that vanilla ice cream pairs well with this, so that’s what I chose. I wouldn’t mind Strawberry 🍓 if I have that when I made this.
  • Chopped Almonds – This is for garnishing, you can opt out for this but if you have some, I highly recommend add it. I personally love the crunch it adds to the smooth texture.

Ingredients:

  • 4 ripe Avocado – cut into small pieces
  • 1/2 cup Milk
  • Vanilla Ice Cream
  • 2 tablespoons Sugar Syrup (or any liquid sweetener of your choice)
  • chopped roasted Almonds
  • For the Sugar Syrup (can substituted with any preferred sweetener)
    • 1/4cup Sugar
    • 1/4 cup Water

Instructions:

  1. Make the Sugar Syrup: In a pan, pour water. Add the sugar and stir until the sugar is fully dissolved. Have the heat in low when you do this. Pour in a container with a lid and cover. Let cool completely before using for cold drink.
  2. Puree the Avocado. In a blender, blend the avocado, milk and sweetener.
  3. Serve: In a serving glass, put the blended Avocado mixture followed by scoops of ice cream.
  4. Garnish: garnish with toasted sliced Almonds or any desired toppings.
