Today’s Quick & Easy Recipe

Today’s quick and easy recipe is a soft, creamy Cheese Omelette. This is one of my favorite quick breakfast any day of the week. Like today, it’s actually Saturday. I did not expect to wake up late today (8:30am) as I am used to waking up at 5:00am even on a weekend. Being able to wake up late is such a weekend treat to me, like today. I did my usual morning routine in a weekend. The first item in my itinerary is to make myself a warm cup of lemon water. Then after that, I’ll spend about an hr reposting the weekend posts in other social media platforms. I finished at around 9:30 am and that’s when my stomach started begging for food.

Creamy Cheese Omelette For One

I went to my fridge to see what I can make quick, and this Cheese Omelette is what came out of my visit to my fridge. I often have eggs and assortment of veggie because I love adding veggie on most of my meals. I saw a small amount of leftover cheese when I made my cheese bread, just enough to fill this omelette. Then I saw a lot of chives in my freezer. I harvested so much chives this year that I had to freeze them. So that definitely made it to this omelette. Then I used some basic seasoning and spices, you can change this based on what you have. Salt, pepper and garlic powder are my basic spices for most of my savory cooking, so that’s what I used here.

How To Make Soft and Creamy Omelette

This Omelette cooks in less than 5 minutes, that’s with already a lot of allowance it in. The actually cooking time will be about 1 minute (that’s fast). You might be asking is that enough time? Yes, it is! In fact, the longer you cook the egg, more more gummy it becomes. The first tip in making an amazing omelette or scrambled egg is to have the pan heated before you pour the beaten egg. The hot pan speeds up the cooking while retaining the moisture of the egg. You can tell if your pan is hot enough 1.) if the butter sizzle when you put it in the pan and it only takes seconds for it to fully melt 2.) when you can see the egg instantly cooking before your eyes. The edges of the egg will immediately turn light in color and the egg mixture will be bubbly.

The second tip is to do not over cook it. I used to cook my omelette and scrambled egg until the egg is brown. If you reach that stage, you’ve already over cooked it. The egg should still be pale and light in color, it should be soft and when you push the pan back and fort, it wiggles.

I was happy the way it did it before until I started cooking it this way. There is no comparison in the texture. An over cooked omelette is dry, while this my dear is very soft (but cook), moist and it melts in your mouth. Why cook longer when all you need is few second. Save the extra time to make yourself a coffee or cut up some fruits and veggies.

Easy Cheese Omelette

Ingredients:

  • 2 Eggs
  • 2 teaspoon Butter or 1 teaspoon Oil
  • 1/8 teaspoon table Salt
  • 1/8 teaspoon Garlic Powder
  • 1/8 teaspoon Black Pepper
  • 1/8 teaspoon Paprika
  • 1 teaspoon chopped fresh Chives ( you can use dried chives too)
  • 1/4 cup grated Cheese (Cheddar or Mozzarella or combination of Both)

Instructions:

  1. Heat the pan. While waiting for the pan to heat, beat the eggs and add the seasoning, spices and herbs EXCEPT the salt. We’re adding the salt midway the cooking.
  2. Add the butter or oil in the pan. Swirl the pan to coat the pan with butter as it melts.
  3. Pour the beaten eggs on the pan and let cook for 10-15 seconds. Use a fork to lightly stir the egg. Once the top is halfway cook but still wet, add the salt, chopped chives and grated cheese. Cook for 30 seconds and then fold twice so it looks like and omelette.
  4. Remove from pan and transfer in a plate. Serve with fresh fruits and veggies on the side, or add some toast for a more filling breakfast.

Recipe Notes:

  • Make sure that the pan is hot before you pour the beaten egg. This will make the cooking of the egg quicker while retaining moisture.
  • Do not over cook. 45 – 60 seconds is all you need to cook this omelette. Cooking it longer will make it dry and gummy.
