Blogging keeps me sane 🙂 and help me balance my life between work and personal time. I love sharing recipes with you as well as my travel escapades. I had been busier lately with work and I started making my meals on the fly, you know whatever I have on hand. Something that I do not have to plan just like when creating a posts for the blog. I thought I would create a short post about this, not as elaborate as my full post but enough to give you idea on how you can make it at home. This will be easy and quick recipes that you can make in less than 30 minutes max or even 5 minutes less. We all need a short break from the kitchen, but that doesn’t mean we have to stop making delicious meals to nourish us.

Peach and Mint Iced Tea

Peach is in season and I have tons of fresh Mint in my garden 🪴so I decided to put this two together to make a refreshing iced tea drink, Cold Brew Peach Mint Tea. I cannot stress enough how homemade iced tea is better than store-bought or powdered ice tea. Making homemade iced tea is a great opportunity to use fresh ingredients like fruits and fresh herbs. You can also adjust the sweetness to your preference, add as much or less sweetener as you like and choose the type of sweetener that you like. I always suggest using liquid sweetener for iced drinks as it dissolves easily but you can use any sweetener of your choice. Let me know in the comments what is your favorite sweetener for iced drinks.

The Peach Syrup

What makes this iced tea special the use of homemade Peach syrup to sweeten it. You can use other liquid sweetener but using a Peach syrup gave it a better Peach flavor, maybe not too intense but hood enough than regular simple syrup. I make fruit syrup when we have an abundance of fresh fruits, nothing taste better than using fresh fruits. I hope this cools always be the case, but I do understand that Peach is seasonal and sometimes you just have to use frozen when that is what’s available.

Peach Syrup

Don’t worry, fresh or frozen, both works. The cooking time will be a bit longer for frozen so just add few minutes. Basically, all you need to do is to simmer the Peach with sugar and water. I used the same ratio for my simple syrup for this one. That is 1:1 if I want a less sweet and a hit liquidy syrup and 1:2 if I want a sweeter, thicker syrup. More sugar of course means sweeter and thicker syrup (1:2 ratio).

Ingredients:

  • 1 1/2 cup Room temperature Water
  • 3 bags Tea ( I used Earl Grey)
  • 1/4 – 1/3 cup Peach Syrup (or any desired sweetener)
  • fresh Mint Leaves ( or Mint extract)
  • Ice cubes for serving
  • fresh sliced Peach for serving

Peach Syrup Ingredients:

  • 4 large Fresh or Frozen Peach – skin and pit removed
  • 1/2 cup granulated Sugar

Instructions:

  1. Make the Peach Syrup: Use fresh or frozen Peach. If using fresh, make sure to remove the skin and the seed. Cut into small pieces and transfer in a pan. Add sugar and simmer in medium heat until the sugar is dissolved and the Peach almost mushed up. Pour the mixture into a sieve. Transfer the syrup in a jar and cover with a lid. The syrup will thicken as it cools down. If you want a sweeter syrup, feel free to add more sugar. Do not throw the Peach pulp, you can use this as toppings for oatmeal or for mixing in smoothie.
  2. Pour the Peach Syrup in a jar, followed by water and mint leaves. Add the tea bags. Shake or stir the jar to bruise the mint leaves. Cover and leave overnight in refrigerator.
  3. Pour in a serving glass with sliced Peach and ice cubes.
    Enjoy!
