Unfortunately, some good things have to end, but remember every end opens a new door for anther start. This Mediterranean Chicken Pasta Salad is a complete meal on its own. It got chicken for protein, pasta and some veggies to complete the plate. It’s easy to make and its perfect option for a lighter pasta because it doesn’t use any heavy dressing. It’s simple and yet satisfying and filling. 

Tuna Salad Stuffed Avocado Boat

Both Avocado and Tuna are packed with healthy fats and nutrients that will benefit our body. They are both very versatile and can be used in countless easy recipes that are filling and satisfying. Today, we are going use these two ingredients to make the Pinterest famous Avocado Tuna Boat or Stuffed Avocado with Tuna as some people call it.

It comes so easy, great for meal prep, quite filling and it taste great with all the wonderful marriage of herbs and spices in it.

This Zucchini & Chickpea Salad is such a nice light lunch, if you are not vegetarian you can add protein like chicken or maybe salmon, and for seafood lovers maybe spicy shrimp sounds delicious to me.

But since I am obsessed with sesame oil, I splurge and do a generous drizzle of that. So easy, so refreshing.

Avocado Tomato Salad. A simple refreshing salad perfect for a quick melanin a busy day. Sweet ripe Cherry Tomato, nutrient packed Avocado, fresh Basil, Mint and a simple homemade honey vinaigrette dressing.

Green Goddess Salad

Let`s go clean and green with his hearty all green salad to go. This is a simple Green Goddess Salad tossed in honey dijon mustard lemon dressing then packed with soft boiled egg and a homemade Tzatziki Dip. A great vegetarian salad to go, but if you feel like making it for a full meal, simply serve it with protein of your choice. I like pairing it with roasted chicken, salmon and sometimes with garlic shrimp.
